I really wanted to make banana muffins but I didn't have eggs so I used this recipe with alterations. I increased the amount of baking powder by about 1/4 teaspoon and added juice. The juice was Bolthouse Farms C-Boost...it has mangos, pears, and cherries, but you really can't taste that once the muffins are baked. I added the juice in order to improve the texture of the batter. Without eggs, the texture can be extremely dense. If you're going to use juice, I suggest pouring in a little bit at a time, mixing it in, and then seeing if you need more. You don't want to spoil the batter by using too heavy of a hand.
These turned out delicious and fluffy, and they could easily be made vegan by just replacing the butter with an oil!
