Great Green Salad

Reviewed: Apr. 20, 2014
Great dressing, great components. But not altogether. I feel the Dijon mustard is the deal breaker . Really overpowers the lovely avocado, almonds, feta.but I was really attracted to the idea of the avocado in the dressing with all the greens. I will develop a tequila lime vinaigrette for this, sweet with a little tang, maybe eliminate the feta. Still working on it.

The Best Chicken Salad Ever

Reviewed: Apr. 18, 2013
I had never considered my beautiful cuisinart processor for making chicken salad ! Great thing to do. But overprocessing results in a "paste" pretty quickly, so I used the pulse just enough to cut up all the chunks without overdoing it. I had a bunch of fresh parsley, some red and white onions, celery of course, the dressings you describe( miracle whip and Marzetti's) in generous proportions. Also used kosher salt and fresh ground pepper, dash of smoked paprika. I added in two hard boiled eggs, I really feel that added to the rich taste of the salad. After processing, added chopped ( by hand)green grapes and toasted pecans.Awesome !This is a good recipe that I felt needed enhancement to make it great and I succeeded in doing so. Thank you! It's so easy to make.

Vegan Red Lentil Soup

Reviewed: Mar. 9, 2013
This makes a very rich hearty soup. Made this as written but added some chopped baby bella mushrooms as it cooked ( had these on hand). I used a light touch on the seasonings and will add more next time. I will use light coconut milk next time to reduce calories. Sauteed the onions in a little avocado oil. This is delicious and vegan, a real keeper. I love it.

Creme Brulee French Toast

Reviewed: Feb. 10, 2013
Looked at many of the reviews and then made the recipe exactly as is. Exceptions: left the crust on the fresh grocery store variety french loaf, added some cinnamon spice mix to the top of the dish before baking. Baked it up to the forty minutes or so. The last few minutes of baking the whole casserole began to puff up beautifully!Didn't turn the bread or broil anything. A wonderful rich sauce formed on the bottom. The bread slices were moist on the inside and the crusts added a little bit of crispiness to the dish.Looked just like the picture. Rave reviews from husband, granddaughter and self on the taste. No improvements necessary for taste. Because of the calories however, this will be a special occasion dish. Very easy to prepare the evening before and that's very important.
