Carrot Cake III

This is a very moist and flavourful cake. Even people who "don't like" carrot cake eat this up.

Marinated Mushrooms II

Excellent recipe - I let them simmer too long on my second batch which allowed too much of the vinegar to evaporate so the oil hardened around the mushrooms in the fridge. They still tasted great but they looked a little yucky. If you follow the cooking time, they turn out great everytime! Thanks for sharing.

Easy Focaccia

Heather's Grilled Salmon

Excellent flavour and easy to make. I added extra chili flakes because we like the heat. I also baked mine in a glass dish uncovered for 20 minutes and marinated overnight. Very nice marinade.

Heavenly Chocolate Mousse

Absolutely delicious. I used semi-sweet chipits and topped it with fresh raspberries - next time I would layer fruit throughout to cut the richness. Perfect dessert!

Megan's Granola

This granola was perfect. The sweetness was right, the flavour was excellent and it was nicely crunchy. I added a cup of unsweetened, shredded coconut as well and it was terrific. I just realized that I forgot to add the oil and it turned out great without it.

Best Big, Fat, Chewy Chocolate Chip Cookie

These cookies are excellent. I seperated the dough into 36 balls and popped them in the freezer for 30 minutes. This made them firm enough to bake in perfect circles of chocately goodness. I cooked until they just started to brown and them came out beautifully. Great recipe.

Rich Chocolate Frosting

The icing had to be whipped for a while to remove the clumps of cocoa which seemed to thin it out a little. I would only add a bit of the milk at first and then whip it until smooth to see if any additional milk is necessary.

Chef John's Buttermilk Biscuits

This was a very nice biscuit. I made my buttermilk with 3/4 cup of milk and tablespoon or so of lemon juice. I also used a stone pan to bake them and the bottom came out perfectly golden brown.

Baked Salmon Fillets Dijon

The best salmon ever. I didn't use the breadcrumbs and I only prepared 2 peices of salmon in a ceramic dish. The extra sauce melted nicely over the salmon as it cooked and it was a good dipping sauce as well. I also used 2 tablespoons of honey-dijon and one tablespoon of regular dijon. I topped each peice of salmon with crushed pecans and that made this dish to die for. What a crowd pleaser!
