Banana Sour Cream Bread

This Banana bread is fantastic. My husband doesn't care for banana bread but went crazy over this recipe! I halved the recipe & made 2 loaves. I used 3.5 large bananas & just sort of squished them in my hands for a few seconds so I didn't completely mash them up. But the chunks in the bread made it even better! I didn't feel like using 1 1/2 eggs so I just used 2 eggs. I used light sour cream & also used half splenda and half white sugar. I left the 2 loaves in at 300 degrees for 1 hour, rotating the loaves in the oven half way. I also lightly covered the loaf pans with foil after 40 minutes. Wonderful, wonderful, Wonderful!

Quinoa and Black Beans

If you have never made Quinoa & are a little hesitant to try it....try this recipe! I have never made Quinoa (or even tasted it) prior to making this recipe. I have been seeing Quinoa in a lot more recipes lately so I decided to give it a go. I added a 1/2t more cumin as recommended. I also diced up a tomato & added it right before serving. It added a nice pop of color. This recipe is delicious cold or warm. It also makes A LOT so you will be lucky enough to have leftovers. I added shredded chicken to it the following day & turned it into a burrito filling for lunch the next day & it was a great hearty addition! I can't wait to make more! This recipe definitely earns the 5 stars.

Amazing Pork Tenderloin in the Slow Cooker

This came out pretty well....not the best tenderloin I've ever made but it was easy to make. If I didn't already have a bottle of red wine open at home, I don't think I would go out & buy one for this recipe. I would probably change out the 1c of water with something else...maybe a beef broth. It was missing depth of flavor. Maybe mix in a little honey with the sauce just before serving. It was a decent, weeknight meal.

Curried Honey Mustard Chicken

I made this exactly as written. It wasn't as good as I had hoped. The ingredients sounded excellent together. I normally make either a Honey-mustard style chicken or a curried chicken..but this recipe seemed to be both! The chicken lacked color & the flavor wasn't as strong as I had hoped.

Slow Cooker Buffalo Chicken Sandwiches

I made this recipe exactly as written. I didn't think it was fantastic, but I didn't think it was bad either. The chicken came out a little overdone. I would consider making it again, but cook it int he slow cooker for 4 hours instead. I used Frank's hot sauce (which is the best!). I just served it on whole-wheat hamburger bun...and I put a layer of blue cheese dressing on the buns since you have to have blue cheese with buffalo wings! :) Overall, quick & easy weekday meal. Nothing I would serve to a guest though.

Chinese Chicken Salad III

This is an excellent recipe, specifically the dressing! You can use any veggies you want, I chose: Napa Cabbage, Romaine Lettuce, Cilantro, Julienned Carrots, Cucumber, Bean Sprouts & Thai Basil. I watered down the dressing just a little so it was easier to toss. I added a little lime juice to the dressing & that really enhanced the flavor well! This is a restaurant quality salad! Thank you for sharing!

Tex-Mex Turkey Soup

I tried this recipe last night...and followed the entire recipe to a "T". It ended up tasting like a watered down turkey chili. So that's what I ended up turning it into...Just added a little more chili powder & cumin and thickened the broth a little. Nothing was wrong with the taste, I guess I expected it to taste more like a soup instead of a chili.

Spaghetti Carbonara II

Excellent recipe! I usually time the spaghetti noodles to finish cooking right when I'm done putting together the rest of the ingredients. The noodles still have to be warm when you mix it with the sauce. Instead of using olive oil to loosen the noodles, I used some of the reserved bacon fat. Oh my! I occassionally add a little heavy cream when I want a heartier meal.

Cornbread Muffins I

These are excellent! I use canned corn & chop them up a little before adding them into the batter. I also soak my cornmeal in about 1/4c of milk for at least 1 hour. It seems to keep them moist...or it could be my imagination. LOL! I use Kauai Honey which makes a HUGE difference in flavor. I tried using the regular Honey in the bear bottle & the taste was just not the same! So if you can, use a better quality honey. Great with Chili...You never need to slather butter on these muffins!

Dawn's Candied Walnuts

I made these because I had extra walnuts after making some bread. I topped my salad with them and it makes a regular salad, spectacular! I didn't really care about the "candy stages", sometimes it comes out a little sticky, sometimes it comes out harder like candy. It doesn't matter because it doesn't last very long! Just enough for dinner & maybe lunch the next day! LOL

Key Lime Cheesecake I

This was a good cheesecake. I added a little extra key lime juice and wish I hadn't. It would have had lots of flavor with the recommended amount. I used the premade graham cracker pie crust which worked out fine.

Garlic-Lemon Double Stuffed Chicken

I thought this was pretty tasty. I followed the recipe almost exactly...just added a little more lemon juice, which I shouldn't have done. The lemon was a little too overpowering. I used the recommended amt of cream cheese, which I found to be fine. It was a good dish for dinner, but didn't serve up well the next day for lunch.

Mediterranean Stuffed Chicken

This was just "OK" for me. Nothing special or out of this world. I tried it exactly as written and wasn't impressed. I tried it a second time with premade Chive flavored Cream cheese and mixed some sundried tomatoes into the cream cheese, that spruced it up a little but it wasn't worth the cost.

Sausage and Bow-Tie Pasta Florentine

This is my lazy night pasta dish. Incredible flavor! I use the Classico Garlic Alfredo jarred sauce. I stretch the jarred sauce by making a roux with butter/flour/garlic/salt/pepper then add milk....and then I mix the jarred sauce into that. I just like my pasta with extra sauce. I've tried it with mild italian sausage, and also pork link sausage and the flavor is just not the same. Stick to the Hot Italian Sausage. Yum!

Cheesy Potato and Corn Chowder

Before trying this recipe, I've never made any type of chowder before. The only thing I added was a little more potatoes and I added some crispy bacon when serving. I've tried it with regular 2% milk and also 1/2 milk and 1/2 half & Half. Because I added extra potatoes, using just milk works well. The half & Half makes it too thick for me.

Baked Pork Chops I

Terrific, easy pork chop dish. I've tried it with boneless and bone-in pork chops and it came out great both ways. The first time I made this I was worried about baking pork for that long, but it came out fork tender!

Honey Baked Chicken II

This recipe was a good weeknight recipe. I also cut back on the butter by half but I probably could have cut it back even more. I don't eat the skin of chicken so I should have taken the skin off before baking. It would have made it more flavorful. I ended up removing the oil from the sauce after baking, then thickening it with a little cornstarch. Makes a nice sauce.
