Delicious Ham and Potato Soup
I needed an economical way to use up some extra ham and started looking for a good soup recipe, since the season's first cool front just hit. The result was this beautiful, thick, delicious, chowder-y recipe! It was SO easy to make and even my hard-to-please sister (who cooks much swankier things than I do), called it fantastic, saying, "This is so good, it doesn't even need cheese." Though she *did* suggest adding green onion next time. ;)
Changes I made: I needed a slightly bigger batch, so I added extra diced potato and ham (not quite doubling the recipe), I likewise made more of the roux. I also added a bag of frozen corn and a good dash of garlic powder. I discovered *after* starting all the chopping that we were out of celery, so I was forced to omit that.
This is definitely a "keeper" of a recipe that will be perfect to have going into the fall season!
