Lemon-Pepper Salmon II

Glorious! I used a filet of salmon instead of the steaks but it worked out very well. The melted butter and soy sauce form a crust over the top with the seasonings, and paired with the tender salmon it's just mouth-watering.

Breakfast Burritos de Frank

Pretty good! I used black beans that were already spiced with chili and cumin. Yum! I left out the salsa because I don't like the wateriness merging with the eggs and I think it makes the tortilla soggy. We liked it, though!

Caramelized Onion and Gorgonzola Pizza

This was a hit at a birthday party I threw for a couple of friends. I had never had Gorgonzola cheese but found that I love it! It's a milder type of blue cheese and it went very well with the caramelized onions. It does take a while to caramelize the onions so make sure you start it in plenty of time to pop in the oven when your guests arrive. Also, I made a homemade pizza crust because it's easy and so much better than the refrigerated type.

Greek Saganaki

This is really scrumptious! My husband and I ate it for a late lunch on a weekend day when we were going out to dinner with friends and didn't want to fill up. It's not difficult to make and tastes like something you would order in a nice restaurant.

Lazy Man's Barbecue Pork Sandwiches

This is really good! I was surprised at how good it was, to be honest, and was a little nervous about it since there were no other reviews yet, but the beef broth, hot sauce, and Worcestershire sauce work some magic in the crock pot. I actually ran out of Worcestershire sauce so when I went to make the barbecue sauce I substituted soy sauce -- it still turned out very well. I did use a few tablespoons more ketchup than they called for because I didn't think it looked right. I served it on potato rolls with cole slaw and sweet potato fries on the side.

Pan Fried Catfish Filets

I wish I had put these in the oven to finish them off, too -- the fillets were thick and I overcooked them on the stove. Unfortunately the olive oil gave these a funny taste (I wish I had used canola oil) and the overcooking caused the garlic to taste bitter. Ick. Seasoning was yummers, though.

Olive Cheese Appetizers

I was a bit disappointed because in the oven these do not retain their shape. In fact,they end up flat with a round bump in the middle and I don't have to tell you which part of the female anatomy they resemble. Very greasy and floury, too. My dog loved the scraps I didn't eat.

Mushroom Blue Cheese Turkey Burgers

These are pretty good! I mixed the blue cheese in with the meat and everything else. I did forget the chopped onion, but they were still good -- I just served them with fresh sliced onion instead. I used the leftovers to make Italian Wedding Soup the next day!

Roasted Brussels Sprouts

I crave these! I made them for Thanksgiving last year and have been making them every few weeks ever since. The first time you make them you will worry that you are burning them, but just have faith because they are supposed to be dark golden brown on the outside and warm and tender on the inside. I use a chunky sea salt and lots of freshly cracked black pepper. Yum! Everyone in my family will eat these, even if they don't typically like brussels sprouts!

Artichoke Bruschetta

This is *very* yummy ... it really hits the spot as an appetizer. Some artichoke dips are too "mayonaisse-ey" for me; this is not. The red onion gives it a nice bite, too. I added a dash of celery salt to the mixture before spreading it onto the sliced baguette.

Easy Peach Cobbler

This recipe has some flaws the way it is written (adding too much water, not mixing the cream cheese and cake mix well enough, etc. as mentioned in other reviews) but overall you do end up with a cobbler-like dessert. My problem is that it is WAY too sweet! The cake mix is very sweet already, and you end up with a higher ratio of cake to fruit than is appealing. If I had added a cup of sugar to the peaches it would have been inedible.

Chocolate Covered Easter Eggs

I made most of them in peanut butter and about a quarter of them with maraschino cherries added to the plain mixture. These were a very big hit! I took them to my mom's for our family Easter dinner, and I shared some with folks at work, too. Everyone liked them!

Hot Fudge Sauce II

This is a delicious chocolate sauce, but not quite the "fudge" sauce I was looking for. We enjoyed it, nonetheless. I am giving 4 stars because the sugar being called for is way too much! I used half that amount and it was perfect.

Easy Breaded Shrimp

This was very easy and the shrimp turn out great! I did add some Old Bay Seasoning to the breadcrumbs, and then I just used my iron skillet with about a quarter inch of canola oil and sauteed the breaded shrimp for a couple of minutes on each side. Perfection!

Black Pepper Beef and Cabbage Stir Fry

Actually, I thought this was pretty good, and healthy, too! Not sure what the others who hated it so much did wrong. My veges weren't soggy, either. If you know how to stir-fry, they should still be crisp when served. I used an orange bell pepper and everything was yummy! Also, as I am on a very strict diabetic diet, this was good because I could eat all of the ingredients. Thanks!

Apple Walnut Salad with Cranberry Vinaigrette

This is a great recipe for a winter salad, although I agree with the person who said there was a bit too much red onion. I love the way the cranberries plump up in the dressing. I made this during the holidays when my family was over for dinner and they all loved it!

Maria's Stuffed Chicken Breasts

My husband liked this a lot more than me, although I couldn't get him to take the leftovers for lunch the next day, lol. I found the chicken to be a bit dry and chewy, and it wasn't done all the way through after the recipe's prescribed amount of time. I ended up just eating the sauce and cheese and not any of the chicken because it was so rubbery.

Cheese Garlic Biscuits II

These are good! I thought they might need more flour, but I left the batter alone and it worked out just fine. More flour might have made them too dry. I think you do need to add a little more salt and a little more cheese than called for; hence only four stars.
