Cream of Fresh Asparagus Soup II

This was quite good! It needs some grated cheese just before serving (I used Parmesan but Cheddar would probably be good, too), and I also added a few crackers. We had this for dinner with a salad.

Roasted Brussels Sprouts

I crave these! I made them for Thanksgiving last year and have been making them every few weeks ever since. The first time you make them you will worry that you are burning them, but just have faith because they are supposed to be dark golden brown on the outside and warm and tender on the inside. I use a chunky sea salt and lots of freshly cracked black pepper. Yum! Everyone in my family will eat these, even if they don't typically like brussels sprouts!

Pepperoncini Beef

This was OK, but not anywhere near as wonderful as I had anticipated from some of the reviews. We thought it was spicy enough, but not as rich and terrific as other Italian beef we have had.

Golden Sweet Cornbread

Cheesecake Supreme

My family said this tasted better than restaurant cheesecake :). Very creamy and dense! Also, very rich -- you won't need to eat very much to satisfy your craving for cheesecake!

Broiled Tilapia Parmesan

This is glorious! I use a little less of the butter and mayo simply because I don't think this recipe really needs it. The idea of Parmesan with fish may not sound so great, but it really is delicious. I have made this for dinner parties and the guests asked me for the recipe after the first few bites.

These beans are quite good! Be careful not to use too much boullion because it can make the green beans too salty. But this is definitely more interesting than boring old beans from a can!

Hot and Spicy Tofu

This was lovely -- very much like something you might get in a restaurant. I have been looking for a recipe like this for tofu for quite some time. We like the way the tofu gets brown and sealed on the outside yet stays moist and soft on the inside. The peppers and garlic really bring a nice flavor to the sauce.

Creamed Chicken for Biscuits

This makes a nice sauce. I adjusted the recipe a bit by using less butter and using half-n-half rather than whipping cream. I just simmered it a little longer to make it nice and thick and creamy. I used sliced fresh garlic cloves (two) that I sauteed with the cut up chicken breasts in a little bit of butter. I served this over whole wheat toast for lunch. I would like to try it over egg noodles. Yum!

Black Pepper Beef and Cabbage Stir Fry

Actually, I thought this was pretty good, and healthy, too! Not sure what the others who hated it so much did wrong. My veges weren't soggy, either. If you know how to stir-fry, they should still be crisp when served. I used an orange bell pepper and everything was yummy! Also, as I am on a very strict diabetic diet, this was good because I could eat all of the ingredients. Thanks!

Mushroom Blue Cheese Turkey Burgers

These are pretty good! I mixed the blue cheese in with the meat and everything else. I did forget the chopped onion, but they were still good -- I just served them with fresh sliced onion instead. I used the leftovers to make Italian Wedding Soup the next day!

Artichoke Bruschetta

This is *very* yummy ... it really hits the spot as an appetizer. Some artichoke dips are too "mayonaisse-ey" for me; this is not. The red onion gives it a nice bite, too. I added a dash of celery salt to the mixture before spreading it onto the sliced baguette.

Pan Fried Catfish Filets

I wish I had put these in the oven to finish them off, too -- the fillets were thick and I overcooked them on the stove. Unfortunately the olive oil gave these a funny taste (I wish I had used canola oil) and the overcooking caused the garlic to taste bitter. Ick. Seasoning was yummers, though.

Streusel Topped Blueberry Muffins

My husband really liked these; I thought they were good as far as muffins go, but perhaps not orgasmic. I used up the last of our own homegrown blueberries from last summer (they were in the freezer) and I wish I had more!

Caramelized Onion and Gorgonzola Pizza

This was a hit at a birthday party I threw for a couple of friends. I had never had Gorgonzola cheese but found that I love it! It's a milder type of blue cheese and it went very well with the caramelized onions. It does take a while to caramelize the onions so make sure you start it in plenty of time to pop in the oven when your guests arrive. Also, I made a homemade pizza crust because it's easy and so much better than the refrigerated type.

Apple Walnut Salad with Cranberry Vinaigrette

This is a great recipe for a winter salad, although I agree with the person who said there was a bit too much red onion. I love the way the cranberries plump up in the dressing. I made this during the holidays when my family was over for dinner and they all loved it!

Greek Saganaki

This is really scrumptious! My husband and I ate it for a late lunch on a weekend day when we were going out to dinner with friends and didn't want to fill up. It's not difficult to make and tastes like something you would order in a nice restaurant.
