Tortilla Soup I

This is the best tortilla soup I've ever made, and I've tried a few really good ones. I had a lot of leftover chicken from Father's Day, so I made this twice during the past week. The first batch I used some leftover homemade salsa with fresh tomatoes and jalapeno, and the second time I used canned crushed tomatoes and pickled jalapeno, and both ways it was magnificent. I've eaten it for lunch and dinner a few days this week. Yum!

Breakfast Burritos de Frank

Pretty good! I used black beans that were already spiced with chili and cumin. Yum! I left out the salsa because I don't like the wateriness merging with the eggs and I think it makes the tortilla soggy. We liked it, though!

Baked Eggs in Canadian Bacon Cups

These are OK. The eggs are a little bit rubbery. I think next time I will just scramble them like usual and serve the Canadian bacon on the side. The best thing about them is their low-carb qualities.

Lazy Man's Barbecue Pork Sandwiches

This is really good! I was surprised at how good it was, to be honest, and was a little nervous about it since there were no other reviews yet, but the beef broth, hot sauce, and Worcestershire sauce work some magic in the crock pot. I actually ran out of Worcestershire sauce so when I went to make the barbecue sauce I substituted soy sauce -- it still turned out very well. I did use a few tablespoons more ketchup than they called for because I didn't think it looked right. I served it on potato rolls with cole slaw and sweet potato fries on the side.

Creamy Au Gratin Potatoes

These were quite plain. They were creamy, indeed, but I've had au gratin potatoes before that were much better than this. I think I'll try another recipe next time.

Baked Fish with Shrimp

This was OK ... I added about a tablespoon of Old Bay seasoning and I used tilapia. I still found it to be a little bit "blah" -- not terrible, but just not something I think I would find myself craving. My husband, who almost always raves over my cooking, even said it was "OK" when I asked him if he liked it (and I don't usually have to ask him). I don't know if I'll be making this again or not. Maybe the addition of white wine would help?

Salisbury Steak

Very good! I think it may be a little bit heavy on the Worcestshire sauce, so next time I will tone it down. I followed the recommendations everyone else offered to add a second can of soup and double the gravy ingredients, and I'm glad I did! The beef patties are very flavorful and moist. This is probably the best recipe for Salisbury Steak that I have tried!

Slow-Cooker Pepper Steak

I made this for friends who came to dinner, and everyone loved it! Make sure you have lots of fluffy rice to go with it. My husband and I ate it for leftovers the next evening, and I took the rest to work for lunch after that. All in all, an excellent slow cooker recipe that leaves the meat very tender and flavorful. However, I am giving four stars because I agree with others who said the vegetables are a bit squishy when it's time to serve. Next time I will start checking for doneness a lot sooner ... maybe an hour or two sooner!

Very creamy and delicious! Just the right amount of milk and sour cream! I used 1 percent milk and I had made some dip with ranch dressing and sour cream earlier in the day so I used that.

Caramel Pie II

Wow, this was really good. I don't typically like things that are super sweet and rich, but small servings are worthwhile. I kept mine in the freezer so it lasted a lot longer. Otherwise it started to get goopy. It's so cool what happens to the milk when you cook it in the can!

Spaghetti Squash I

Cheesy Pork Chop Casserole

This was not what I expected. It was quite salty, and I never did find the "cheesy sauce" that was in the description. I agree with the people who said it tasted a lot more like French onion soup than anything else. The pork chops were tougher than usual, too.

Mouth-Watering Stuffed Mushrooms

These are great! They just melt in your mouth, but don't let the hot cheese burn your mouth when they first come out of the oven! They smell and look so good you can't wait to sink your teeth into them. Low-carb, too.
