Awesome Sausage, Apple and Cranberry Stuffing

Third year making it and it is a hit every time. Have had people admit that they take dressing more as an obligation at the Thanksgiving table, but come back for seconds and third after trying this stuff. Love the cranberries and apples in it.

Best Bread Pudding with Vanilla Sauce

Delicious! First time making bread pudding, though I love it. Recipe was easy, clear, and accurate. Made it for family who had it at a restaurant for first time and loved it. Was told that this recipe was many times better than the restaurant. Good flavor without being sickeningly sweet. Did add a splash more cinnamon to both pudding and vanilla sauce, but we love cinnamon.

Tina's Fruit Dip

This is fabulous! I took this to a brunch and got nothing but rave reviews. I used it with pineapple, strawberries, and apples. It has a great taste and a nice texture. A new favorite, for sure!

Lemon Zucchini Drops

These are delicious. Very interesting combination of flavors. I left out nuts as it was a party with kids and someone had allergies. Thought the already interesting combination of flavors would have been even better with the nuts. Mine came out a little flatter than I was expecting, but really quite tasty and a lovely light cake-like texture. Loved the lemon icing, though I added a bit of extra lemon.

Pear and Blue Cheese Salad

This dressing is delicious! I got nothing but rave reviews. Goes quite well with the pears and cheese. I used leftovers on salmon over mixed greens and it was amazing. This dressing will be a new favorite at our house. I didn't find it too sweet, though I used walnuts instead of candied pecans. I didn't want to buy walnut oil, so used grapeseed and found it substituted just fine.

Roasted Beet Wedges

Very tasty. Have always thought beets were a bit over prepared, so really liked the simplicity of the recipe. Good both with and without the rosemary.

Coconut Tilapia with Apricot Dipping Sauce

Delicious. Love the combination of spicy with the sweetness of the coconut. Coating stuck well. Baked instead of fried per instructions, but it turned out beautifully (did not turn). Flavors of fish really pair well with tlhe sauce, which was about as easy as it gets (did not use horseradish as our brown mustard was spicy). This is definitely a recipe that we'll keep using. Much different than most fish recipes and an exciting preparation of a basic white fish.

Cranberry Pistachio Biscotti

These are delicious! They are just perfect - love the flavor, extra crunch from the pistachios and chewiness of the cranberries. I gave these out at Christmas and received wonderful compliments from everyone. They were the first cookies to be gobbled up at home, too. Found them relatively easy to make and they turned out exactly as I expected. They do tend to get softer if packed in plastic bags. Tupperware works fine, probably paper bags would work well , too.

Black Bean Soup I

Easy and delicious. Good basic recipe for a hearty, yummy soup. Everyone liked it. Good without the vinegar, but extra yummy with it added; it gives it more depth of flavor. Very versatile recipe that is good by itself or with any of the usual black bean soup add ins (cheese/sour cream, salsa). Also, very easy to add extra veggies for added nutrition (grated carrots, diced spinach, etc.).

Pear and Almond French Toast Casserole

This is delicious! It may now be one of my family's favorites. Made it for an event at church and got nothing but rave reviews. It's even good at room temperature. General rule on eggs is that 1 egg is 1/4 cup. However, this all depends on the size of your eggs, so don't worry if it's not exact. I as a bit short on the eggs (probably needed 1-2 more), but still turned out wonderfully.
