Egg and Cheese Puffs

Yum, yum, YUM! We don't like chili peppers, so I diced red and green bell peppers, which also made for a colorful touch. And I even added a bit of broccoli so that it wouldn't go to waste. Instead of bacon, I used sausage. I'm not a believer in deviating too much from the recipe, but it was great for our tastes and what happened to be in the fridge. What it showed to me is that this recipe is perfect for customization. Maybe a different cheese, meat, veg, whatever is all it takes to make it perfect for you and your family. I knew when my husband moaned throughout eating them that I'd found another keeper! And it's also low-carb, which is our lifestyle. Thank you for sharing, Karen.

Blue Cheese, Bacon and Chive Stuffed Pork Chops

Truly exceptional! I've made this twice now and it's been a winner both times. All I do is add some chopped walnuts to the filling for some texture. And it's so simple. We love it!

Stuffed Tomato Basil Chicken

Yum, yum, yum! I'm in England, and it's no small task to find any cheese other than cheddar here, but I was able to find slices of mozzarella, which I hoped would adhere to the original recipe as closely as possible. We LOVED it! And there was a piece left over, so we cut it up the next day and added it to a chef salad! This is an easy, delicious recipe. And we're on the Atkins, so it was ideal. Thank you!

Easy Garlic Broiled Chicken

Really, REALLY yummy! I was concerned while making it that it would be too garlicky, and while I LOVE garlic, my husband isn't as big a fan. However, he was the one saying throughout dinner how much he liked it! I didn't deviate from the recipe and I didn't need to.

Marinated Grilled Shrimp

This was truly wonderful! Living in a small apartment, we were not able to grill them, so I simply cooked the shrimp with some of the marinade in a wok. And we made a surf and turf dinner by adding a small steak on the side. Simply fantastic, and I didn't deviate from the menu at all. YUMMM!!!
