Orange Cracker Apricot Chicken
Very yummy!! As someone pointed out, the apricot jam is more chunky then smooth, making it hard to spread. If you have a blender, or something like it, I put it in that and blended to make a smooth paste. Did wonders and tasted awesome! Served with sweet potatoes and sugar snap peas.

Easy French Dip Sandwiches
I agree, this was just "okay." It made up really fast for a quick meal. I thought the bread was really dried out after baking it that long though. My husband is a HUGE fan of french dips and I could tell he wasn't super impressed either. He kept sucking in dried out bread flakes when biting down, throwing himself into coughing fits...More of an eater's error;) I will probably look for a different recipe.

Coconut Shrimp I
Yum, yum and YUM! I was nervous making this for the first time, not sure if it would turn out the same for me, but wow...SUPER easy and so tasty!! I also served it with the orange marmalade dipping sauce that 1husband_1hound posted and that was really good with the shrimp! The husband isn't a fan of horseradish and thought I should cut that ingredient out or in half but I thought it was perfectly fine:) Note: use cooked shrimp because once you have it in the oil, the coconut browns REALLY quick!
