Mom's Meat Loaf

Everyone loved it. There was a lot of flavor in it. I used tarragon instead of sage(oops didn't have any) and it was wonderful. Also, made with 2lbs of and tripled other ingredients. Though tasters said it was great, I think I would use less bread crumbs to have the texture not so soft. Boyfriend and best friend loved it and wanted take-home bags :)

Mini Cheesecakes

Taste was great. Presentation was disapointing. Why did they fall once out of heat? Also, how do you beat cream cheese til fluffy by hand? Tips to get mine to come out creamier? I had tiny lumpies of cream cheese even after I stirred the livin day lights out of the poor dears!
