Broccoli Cheese Soup

Reviewed: Jan. 28, 2014
Great soup! I added some sautéed mushrooms which even my mushroom hating husband enjoyed and I used fresh steamed broccoli instead of frozen, because that was what I had. This made a TON of soup though! We had no hope of finishing this before it went bad, so I put half of the finished soup in a freezer bag, and hoped it would reheat well. It was frozen for about 2 weeks before I pulled it out. I let the soup defrost on the counter all day so it was just a little bit slushy when dinner time rolled around. I emptied the whole bag into my pot and heated it slowly over medium low heat, stirring frequently to help the separated soup mix back together. By the time it was done, the soup had been heated very thoroughly, and you never would have known it had been frozen! I'm definitely going to add this to my list of freezer meals for when I have my second baby!

Best Tuna Casserole

Reviewed: Jan. 28, 2014
It was a yummy dish. I used a little bit more cream of mushroom soup as advised by other reviewers. Instead of two 10.75oz cans I used one "family size" 26oz can. I found the casserole to be plenty moist and not dry at all. If I make this again I will probably ad a bit more cheese mixed in, and bake it at a lower temperature for a longer time. I normally use Italian bread crumbs as the topping for my tuna casserole, but went with the potato chips this time. My husband and I both agreed that we like the bread crumbs better. The only thing I really did not like, was the onions. I'm usually an onion fan, but with the short cook time in this recipe my onions did not cook at all, and they were still totally crunchy and very potent. In the future I will probably use onion powder.

Bada Bing Bada Banged Potatoes

Reviewed: Sep. 15, 2012
I made some potatoes similar to this, and my mom made these Bada Bing potatoes and told me to try them compared to my own. This recipe tastes AMAZING, however, I found some flavors to be a little too over powering and overall I found it to be too greasy as well as time consuming. I said before I had been making my own potatoes which I like to call Italian Scalloped Potatoes that taste almost exactly the same. Instead of boiling and then baking, the potatoes are thinly sliced and layered in a dish with sprinkled herbs and cheese between each layer, then drizzled the butter and oil mixture over the top. They only bake for about 40 minutes but are very well done and taste as far as I can tell, pretty much like this. Its our favorite dish to take to parties and potlucks!
