Portobello Penne Pasta Casserole

Very good. However, true confession, I'm not a huge spinach lover, so I would add half the amount the recipe calls for. Also, needs more garlic.

Garlic Parmesan Monkey Bread

I didn't have enough of the butter/egg mixture for both loaves--only about one-and-a-half, so I will double next time. And, yes, as a garlic lover, needs lots more garlic!

Tomato Basil Soup I

It is thin, almost water-ey, even with blending, it still had a thin, tomato sauce-like consistency. The bigger issue for me was the lack of deep, rich tomato flavor.

Baked Spaghetti

Made this for my daughter's water polo team. Several of the girls said they thought "yuck" when I said I was making spaghetti casserole, and then they tried it--every single one of them loved it! Not a bit left over!

Easy Red Beans and Rice

I've never had "authentic" red beans and rice, but I do like this version. Simple, quick and tasty, a winner with me. Also, I've never been a big fan of turkey kielbasa, but it works wonderfully in this recipe.

Peanut Butter Noodles

I made this twice--once with spaghetti and once with udon noodles; we preferred the spaghetti, we just liked the texture better. The sauce was a little bit thinner than I would like---maybe I'll up the peanut butter next time, either way, it was pretty good.

Onion Pasta

We are an onion loving family, so, we loved this--yes--it's a bit buttery/greasy, but just eat with some french bread to sop it all up and you'll be o.k.! The parmesan cheese is a must!

Slow Cooker Sweet and Sour Kielbasa

I made two big mistakes with this recipe--coooked a little too long and used Turkey Polska Kielbasa--ick. I think you need the "full fat" version to get the right result--my sausage came out really dark and dry. The sauce, however, was really good. I'm sure if I used the right sausage this would be a real winner!

Beef Barley Vegetable Soup

Yummy--a Sunday night staple in our house. I've found that when we eat it the second day, it seems to need a little beef broth added to the bowl--other than that--wonderful! Freezes well also!

Slow-Cooker Chicken Tortilla Soup

I love Chicken Tortilla Soup--and this was one of the best I've tried! My husband who had never had Chicken Tortilla Soup loved it as well--add that together with how simple this is--I gave it five stars! I didn't bother toasting my own tortillas--I just topped my soup with crushed tortilla chips and Monterey Jack cheese--yummy!

Chicken Perkelt

I added quite a bit more sour cream to make more sauce. I made it twice--once with regular sour cream, once with light sour cream. Stick to the regular--the sauce was too watery with the light version.

Pork Chop Casserole I

I didn't care for this at all. Salty, yes, but also very, very bland. I don't know if my porkchops were too thick--I couldn't push them into the rice mixturre. After cooking they were a ghostly white--which I found unappetizing.
