Brown Sugar Smokies

This has become a favorite of everyone who tries them. I wrap the smokies in bacon and secure with a toothpick, put in a zip-lock back with lots of brown sugar and refrigerate for several hours. I always use a foil-lined pan, otherwise cleanup is a nightmare. Last time I made them, I turned the oven off and forgot they were in there for several minutes. They were all caramelized and we loved them that way.

Fried Ice Cream

I used coffee ice cream and coated it with 2 layers of corn flakes using 2 tsp. cinnamon. Coated it with caramel sauce then hot fudge. VERY good! Next time will also use chopped pecans.

Crunchy Caramel Apple Pie

This was an absolute hit...the favorite among many desserts at a recent party. Many said it was the best apple pie they had ever tasted. I used Pillsbury pie crust, a combination of Rome and Granny Smith apples, and added cinnamon to the topping. Brought a taste of it home to my teenager who begged me to make one for us. And it is SO easy!

Beer Butt Chicken

This chicken is awesome! Next time, I will rub the spices in and marinate in a zip-lock bag overnight. I used a gas grill with both burners on low heat (with the lid closed) and basted it a few times. Used a disposable roasting pan with a cookie sheet underneath because I was cooking 2 chickens. When I tasted the wonderful drippings collecting in the pan, I decided to throw in sliced onions and potatoes. Amazing flavor! In my family, I've never seen an entire chicken get eaten with no leftovers. Even the wings were crispy and delicious.

Amy's Garlic Egg Chicken

My husband can't stand garlic so I had to make this in the afternoon and air out the house before he got home. I will definitely sneak around to make this recipe again :-) Also will do the marinating in a zip-lock bag to hide the smell in the refrigerator!!! I used Italian bread crumbs so cut back on the salt and garlic powder. My sons and I thought these were the best, most tender chicken breasts we've ever had. Thank you!!

Barbecued Beef

Great recipe! I added extra Worcestershire and some cayenne and cooked it "forever" in the crock pot. Only other thing I would change would be to trim the meat, but the fat during cooking adds flavor. Better alternative would be to refrigerate overnight and skim off any fat...but now that we've tasted it, waiting another day is not an option :-) Thank you!

Cheesy Ham and Hash Brown Casserole

I used low salt ham, O'Brien potatoes, pepper, 1 can cream of potato and 1 can of cheese soup; lowfat sour cream and lowfat sharp cheddar; only enough Parmesan to lightly coat the surface. Sprinkled lightly with real bacon bits, and 10 min. before it was done baking, I added a can of french fried onions on top. The bag of O'Brien potatoes was only 28 oz. so it was a little soupy when hot, but perfect consistency after it cooled a little. The onion rings really added flavor and it wasn't too salty.

Overnight Blueberry French Toast

This is the only recipe I've tried from this site that I ended up making apologies for. White bread and plain cream cheese combined with so many plain eggs and plain milk just do not make for a tasty base. It tasted like it desperately needed some seasonings, and 1 tsp. of vanilla was not enough to give it ANY flavor. I cut the cream cheese into tiny cubes and was still left with little chunks of basically flavorless cream cheese that do not blend in. The sauce was very good made with cinnamon, nutmeg, and lemon juice added, but it should have been doubled. The only thing that saved me was that I happened to have a can of blueberry pie filling on hand to smother it in.

Brunch Enchiladas

I made these with maple flavored sausage, a can of green chiles, and extra hot pepper sauce; left out the green peppers just because I don't care for them. I left the foil on for most of the baking time. They were very good, but next time I will use fat free half and half and Egg Beaters.

Cinnamon Rolls I

Better than the family recipe I've been making for 30 years! I should have paid attention to the bread machine to add more flour while it was mixing. Ended up having to knead flour into a very sticky dough so I could roll it out. Added pecans to the caramel sauce and had to cover with foil and bake a little longer to get the bottoms done. Excellent flavor!

Chocolate Pudding Fudge Cake

I used coffee instead of water and added l tsp. vanilla. For the glaze I used leftover frosting from Barb's Chocolate Cake which also contains coffee. Very easy and moist. It disappeared fast.

Blueberry Coffee Cake I

We are eating this fresh out of the oven and it is excellent! I have made it with vanilla soy milk and also buttermilk, using 3/4 cup, and used 1 1/2 cups of blueberries. I removed some of the butter as I was cutting it into the topping because it seemed to be too much. Layered batter, berries, streusel, then repeated that and it makes a very moist, flavorful bundt cake. Tested done with a toothpick in 45 min. so watch it carefully!

Beth's Chocolate Chip Cookies

I only had regular Crisco on hand, so added some butter flavored extract and used a little extra vanilla to empty the bottle. I flattened them slightly with the bottom of a glass and baked for 8 min. They are moist even the next day and everybody has raved about them (which doesn't usually happen with the Tollhouse recipe).

Beer Bread I

I made this with shredded sharp cheddar and jalapeno peppers (from a jar). Toasted slices of it under the broiler with butter the next day. Very good, but next time I will go easy on the peppers or use sun-dried tomatoes.

Firecracker Grilled Alaska Salmon

This marinade has wonderful flavor. Next time I will be sure to marinate overnight and will also wrap the fish in foil with some of the marinade and cook it on the grill that way.
