Sour Cream Coffee Cake III

Reviewed: May 12, 2005
Very moist and good flavor but I think next time I will add chopped pecans to the topping. I used double the topping ingredients; toothpick inserted in center came out clean but center fell as it was cooling and it's kind of dense, so next time I will be careful to bake longer.

Death by Chocolate

Reviewed: May 11, 2005
Instead of throwing out a batch of dry brownies, I crumbled them to make this. Good, but *really* chocolatey. Used 2 boxes of pudding and wasn't paying attention when I read the directions that said to make the pudding according to the package. So I read the box and followed the directions. Realized too late that I should have used less milk than that, so it's a little runny. Used Kahlua and coffee mixture instead of just coffee. Very good.

Chewiest Brownies

Reviewed: May 9, 2005
I'm not sure about this recipe. Made as directed, I thought they were too chocolatey and a little too sweet. Tried it again cutting back to 3/4 c. cocoa and 1 1/2 c. sugar, used l/2 oil, 1/2 butter. Baked for the same amount of time and they are hard. Will used as a base for 'Death by Chocolate'

Hamburger Steak with Onions and Gravy

Reviewed: May 4, 2005
I doubled the spices and Worcestershire, it was OK but nothing to rave about.

Wilderness Place Lodge Cookies

Reviewed: Mar. 8, 2005
I found that using 1 c. Crisco and 1 c. butter worked better. The second time I made these, I froze an 8" square pan of the dough for later use. It made some wonderful, chewy 'brownies'. Be sure to toast the walnuts.

Field Salad

Reviewed: Mar. 5, 2005
I make this almost daily, generally using fresh orange instead of apple because it goes so well with Gorgonzola, and I use dried cranberries, toasted sesame seeds, and a variety of nuts. Newman's raspberry vinaigrette is wonderful on this, and it's a pretty salad with oranges and cranberries.

Seven Layer Taco Dip

Reviewed: Dec. 19, 2004
Watch the sodium content of the taco seasoning you buy; the one I chose made the beans so salty, I had to add an extra can of beans. I used the beans with green chiles and skipped the green pepper.

Cranberry Hootycreeks

Reviewed: Dec. 12, 2004
Excellent cookie, loved even by my teens who don't usually eat cranberries or nuts. Baked better on parchment; spread too much on ungreased cookie sheet. Caramelized edges were really good though :-)

Make-Ahead Mashed Potatoes

Reviewed: Nov. 25, 2004
I made this for Thanksgiving dinner and although it was nice to have them done ahead of time, the last thing I needed was to have another thing to put in my oven while making a turkey, other casseroles, and baking rolls. Nobody commented specifically about the potatoes being different...once gravy was used I don't think anyone even noticed.

Sour Cream Pear Cake

Reviewed: Oct. 3, 2004
Made exactly as recipe stated, it's a good cake. Nobody raved about it, so for the amount of work required, I probably won't make it again.

Shrimp and Crab Enchiladas

Reviewed: Sep. 16, 2004
This was "OK" as written; cream cheese and green chiles in the filling would add a little interest. I couldn't find green sauce, so used Old El Paso enchilada sauce. It was good, but nothing to get excited about.

Brisket with BBQ Sauce

Wonderful...didn't have to worry about what to do with leftovers. I made extra sauce to serve on the side.

Pineapple Chicken Tenders

Reviewed: Sep. 5, 2004
Simple and delicious! I added garlic powder and ginger, and ended up marinating chicken breasts for a couple of days. Thread pineapple and colorful chunks of peppers on the skewers with the chicken and serve on a bed of rice cooked in chicken broth for a complete meal.

Ooey-Gooey Cinnamon Buns

Reviewed: Sep. 5, 2004
These are awesome! Not as much filling spread on as the recipes I have used in the past, but the "goo" on the bottom of the pan compensates for that. I am making the dough in the bread machine...second batch in 3 days.

Oregon Salmon Patties

Reviewed: Sep. 5, 2004
These were great, but I question the 3/4 c. liquid which made the mixture extremely soupy. I had to use all of the 2/3 c. crumbs in the mixture then still strain off some liquid. Crushed more crackers for the coating which made an excellent crunchy crust. Next time I print a recipe, I'll remember to also write info. from the reviews on it!

Coconut Ice Cream

Reviewed: Aug. 15, 2004
Great flavor and consistency with no effort! Be sure to buy 'cream of coconut' which was a little harder for me to find, not 'coconut milk' which everybody seems to have. I didn't have heavy cream so just used half and half, and it is fine.

This makes the *best* soup! I made for a friend who just had surgery. She's an excellent cook and is raving about this and wants my recipe.
