Shredded Beef Enchiladas

Reviewed: Oct. 1, 2005
Very good! Cooked the beef with spices overnight in the crock pot, used flour tortillas, Sara's Red Enchilada sauce, and Pepper Jack Cheese for some extra 'heat'. I think they would have dried out pretty badly without the enchilada sauce.

World's Best Lasagna

Reviewed: Sep. 28, 2005
My husband isn't usually crazy about Italian dishes, but he absolutely loved this. I cut back the fennel to about 1/4 tsp. and the salt to 1 tsp. Used fresh parmesan, no boil lasagne, and added a splash of red wine to the sauce. This really is a great lasagne recipe.

Spinach Quiche

Reviewed: Sep. 27, 2005
This is delicious! I couldn't find herb and garlic feta so just used plain, and fresh mushrooms. Only thing I would change is to cut way back on the butter

Blueberry Monkey Bread

Reviewed: Sep. 11, 2005
I only used 2 tubes of biscuits and ended up making extra sauce because I thought the finished product was too dry; maybe I boiled the sauce too long because I was doing other things at the same time. It was good and some people had "seconds and thirds". Suggest using margarine as directed because using real butter gave it more of a 'butter' flavor. than 'blueberry'.

Braised Balsamic Chicken

Reviewed: Aug. 21, 2005
I cut the chicken in bite sized pieces and added spinach at the end for a one dish meal. My husband couldn't stop raving about it. His only suggestion was to use angel hair pasta or rice because the sauce doesn't stick. Maybe will thicken the sauce just a little next time.

Strawberry Pie II

Reviewed: Aug. 16, 2005
Very good pie. I cut the sugar slightly and it was just the right sweetness. Used the recipe for French Pastry Pie Crust which is very tender and flaky. I would recommend cutting the berries, as using them whole makes the pie very hard to cut and makes messy looking servings. Also recommend using 4 T. of cornstarch.

Ann's Sister's Meatloaf Recipe

Reviewed: Jul. 13, 2005
Really good....even the leftovers got eaten. I used Italian bread crumbs and added a little garlic powder and Worcestershire. Instead of plain tomato sauce, I used catsup, brown sugar, and mustard. Using a 'meatloaf pan' that allows the grease to drain away as it bakes really helps.

Chewy Chocolate Cookies I

Reviewed: Jul. 6, 2005
I cut back on the sugar slightly and the flavor is excellent; they are very chewy but they need a little extra flour. Will try with nuts and marshmallows for rocky road cookies.

Kentucky Bourbon Sweet Potatoes

Reviewed: Jul. 6, 2005
These were OK, but I much prefer the sweet potato casserole with brown sugar and pecan topping.

This is very easy and great with the addition of fresh strawberries, blueberries and banana. I make it with 3/4 c. sugar and it is wonderful.

Herb Rubbed Sirloin Tip Roast

Reviewed: Jun. 26, 2005
I cut back slightly on the salt and this was *very* flavorful. Was cleaning out the refrigerator the next night and found l/2 each yellow, red, and orange peppers, some diced onion, and some rice cooked with beef broth. Diced up the small piece of this roast I had left and fried them all in drippings of some sausage (was making a breakfast casserole at the same time). Gave it a few shakes of Worcestershire when it was done and it was good. Amazingly, I reheated the bowl of that the next day and they raved about it being even better than the day before. This is not an easily pleased group here :-) and getting rave reviews from *leftovers* is unheard of!

Zippy Egg Casserole

Reviewed: Jun. 26, 2005
So easy! Popped this in the oven this morning and took it to Bible Study hot out of the oven. Everybody raved about it. Used Sage flavored sausage and didn't change a thing. Great recipe!

This is very good both as a dessert served with whipped topping, and as a filler for chocolate cake.

Chicken Cordon Bleu II

Reviewed: Jun. 5, 2005
This is one of my favorites from this site. I put the chicken rolls under the broiler just before serving because my husband doesn't like soggy breading, then spoon the sauce over the top. The only thing I have changed is to use 1/2 and 1/2 instead of the heavy whipping cream and it didn't hurt the quality at all.

Easy Beef Strogonoff

Reviewed: May 31, 2005
This recipe needed several modifications to get past the 'bland and dry' complaints. Saute' the onions with the meat. Add extra bouillon and water (or beef broth), a few shakes of Worstershire, a couple of tablespoons of Dijon, cut the sour cream to l cup, add 1/2 can of mushroom soup and 1/2 can white wine. Definitely worth 5 stars with modifications, my husband thought it was terrific.

Easiest Peanut Butter Fudge

Reviewed: May 30, 2005
I followed the suggested changes to cut the sugars and increase the peanut butter and it is excellent. Texture depends on the type of peanut butter used. Today I tried Smuckers Natural peanut butter which is not nearly as thick as others so I also had to add back some extra powdered sugar. Really good fudge and it couldn't be any easier.

Alice's Sour Cream Chicken Breasts

Reviewed: May 20, 2005
I did this on top of the stove and it was easy but needed something. I added some cream of chicken with herbs soup which also helped thicken it, plus peas, and served it over rice.
