Herb Rubbed Sirloin Tip Roast

I cut back slightly on the salt and this was *very* flavorful. Was cleaning out the refrigerator the next night and found l/2 each yellow, red, and orange peppers, some diced onion, and some rice cooked with beef broth. Diced up the small piece of this roast I had left and fried them all in drippings of some sausage (was making a breakfast casserole at the same time). Gave it a few shakes of Worcestershire when it was done and it was good. Amazingly, I reheated the bowl of that the next day and they raved about it being even better than the day before. This is not an easily pleased group here :-) and getting rave reviews from *leftovers* is unheard of!

Zippy Egg Casserole

So easy! Popped this in the oven this morning and took it to Bible Study hot out of the oven. Everybody raved about it. Used Sage flavored sausage and didn't change a thing. Great recipe!

Chicken Cordon Bleu II

This is one of my favorites from this site. I put the chicken rolls under the broiler just before serving because my husband doesn't like soggy breading, then spoon the sauce over the top. The only thing I have changed is to use 1/2 and 1/2 instead of the heavy whipping cream and it didn't hurt the quality at all.

Easy Beef Strogonoff

This recipe needed several modifications to get past the 'bland and dry' complaints. Saute' the onions with the meat. Add extra bouillon and water (or beef broth), a few shakes of Worstershire, a couple of tablespoons of Dijon, cut the sour cream to l cup, add 1/2 can of mushroom soup and 1/2 can white wine. Definitely worth 5 stars with modifications, my husband thought it was terrific.

Easiest Peanut Butter Fudge

I followed the suggested changes to cut the sugars and increase the peanut butter and it is excellent. Texture depends on the type of peanut butter used. Today I tried Smuckers Natural peanut butter which is not nearly as thick as others so I also had to add back some extra powdered sugar. Really good fudge and it couldn't be any easier.

Alice's Sour Cream Chicken Breasts

I did this on top of the stove and it was easy but needed something. I added some cream of chicken with herbs soup which also helped thicken it, plus peas, and served it over rice.

Sour Cream Coffee Cake III

Very moist and good flavor but I think next time I will add chopped pecans to the topping. I used double the topping ingredients; toothpick inserted in center came out clean but center fell as it was cooling and it's kind of dense, so next time I will be careful to bake longer.

Death by Chocolate

Instead of throwing out a batch of dry brownies, I crumbled them to make this. Good, but *really* chocolatey. Used 2 boxes of pudding and wasn't paying attention when I read the directions that said to make the pudding according to the package. So I read the box and followed the directions. Realized too late that I should have used less milk than that, so it's a little runny. Used Kahlua and coffee mixture instead of just coffee. Very good.

Chewiest Brownies

I'm not sure about this recipe. Made as directed, I thought they were too chocolatey and a little too sweet. Tried it again cutting back to 3/4 c. cocoa and 1 1/2 c. sugar, used l/2 oil, 1/2 butter. Baked for the same amount of time and they are hard. Will used as a base for 'Death by Chocolate'

Wilderness Place Lodge Cookies

I found that using 1 c. Crisco and 1 c. butter worked better. The second time I made these, I froze an 8" square pan of the dough for later use. It made some wonderful, chewy 'brownies'. Be sure to toast the walnuts.

Field Salad

I make this almost daily, generally using fresh orange instead of apple because it goes so well with Gorgonzola, and I use dried cranberries, toasted sesame seeds, and a variety of nuts. Newman's raspberry vinaigrette is wonderful on this, and it's a pretty salad with oranges and cranberries.

Seven Layer Taco Dip

Watch the sodium content of the taco seasoning you buy; the one I chose made the beans so salty, I had to add an extra can of beans. I used the beans with green chiles and skipped the green pepper.

Cranberry Hootycreeks

Excellent cookie, loved even by my teens who don't usually eat cranberries or nuts. Baked better on parchment; spread too much on ungreased cookie sheet. Caramelized edges were really good though :-)

Make-Ahead Mashed Potatoes

I made this for Thanksgiving dinner and although it was nice to have them done ahead of time, the last thing I needed was to have another thing to put in my oven while making a turkey, other casseroles, and baking rolls. Nobody commented specifically about the potatoes being different...once gravy was used I don't think anyone even noticed.

Sour Cream Pear Cake
