Cherry Cobbler II

Very good and simple, but I'm giving it 4 stars because as written it would have been under a puddle of butter. 1/4 c. was plenty, and I added cinnamon to the batter. I have tried it with blueberry pie filling and cherry and they were both very good. Cut the sugar back to 3/4 c. and you will never miss it. I also baked in a round casserole dish instead of the 13x9" pan which would have been *very* thin.

Toll House Pie I

Following the recipe as written, I had to drain off a good amount of butter when I took the pie out of the oven. On the second try, I cut the butter to 3/4 c., added a dash of salt and a splash of vanilla. Excellent! and the texture is *much* better.

Sweet Orange Chicken II

I followed the suggestions of other reviewers and sauteed boneless breasts with a little garlic. Thickened the sauce with some cornstarch/OJ, added some red pepper flakes and orange rind. It was not overly sweet this way. Served over rice. Big hit!

Simple Scones

I used salted butter and they were fine. The hardest part was hand grating the butter and the whole mix with your fingers thing I didn't go for. So this morning I grated the frozen butter with my food processor, switched to the chopping blade, added the flour and just pulsed it a couple of times. Dumped in the wet ingredients and pulsed just until combined. MUCH easier, (probably took a total of 1 minute) and texture is the same. These are excellent! For the raisin version, I suggest adding a generous amount of cinnamon. The cherry/almond combination is wonderful. I also did a lemon/blueberry and a lemon/cranberry batch but definitely use fresh grated lemon rind along with lemon extract.

Chicken Fried Chicken

Nice crunchy crust which I love, but it definitely needs more spices. To make the coating stick even better, first dip breasts in flour and shake off excess. Then dip in egg and cracker crumb mixture and press it in. Flattening the breasts or cutting in smaller strips is a good idea and saves on frying time.

Best Cream Of Broccoli Soup

I added nutmeg and garlic. Didn't have chicken broth so used vegetable with a chicken bouillon cube. Skipped the roux and mixed the flour in with the milk; left the broccoli in small pieces instead of doing the puree. Much less effort overall and it's good soup.

Best White Icing Ever

I used half Crisco and half salted butter. Also added some almond extract. I like it much better than the all Crisco icing I've been using for years, and the butter did not affect the whiteness of the icing.

Fabulous Homemade Bread

Excellent bread. I thought I would have to freeze some because this is a very large recipe, but heating 2 day old slices for a few seconds in the microwave makes them taste like they are freshly baked. Also great toasted.

Bourbon Pecan Chicken

My husband actually liked this better the next day, reheated briefly in the microwave then finished in the oven. I can't imagine using that much butter in the sauce, I cut it back by 1/4 cup.

Orange Cake

This is an excellent cake. I made with orange extract as I didn't have lemon. Cut the butter for the glaze back to 3 T. and glad I did or it would taste more like butter than orange.

French Beef Stew

I used the cheapest cut of meat I could find and cut into cubes myself. Browned the meat with onion and garlic; added more spices and lots more veggies and red wine. Cooked the meat for an hour before adding the veggies and it is melt in your mouth tender.

Easy Turkey Curry

Good way to use leftover turkey but definitely needs another tablespoon of curry and some pepper. I added peas and topped with french fried onions which I broiled to crisp. Gave it much better flavor. I also cooked my rice with bouillon in the water.
