Mexican Whole Wheat Flour Tortillas

Reviewed: Jan. 1, 2007
I have an electric tortilla press/baker which makes these very easy. My husband shuns anything whole wheat so I used 2 c. unbleached and 3 c. whole wheat. He loved them.

Almond Custard Filling

Reviewed: Jan. 1, 2007
This is great cake filling, just be sure to chill it or your layers will slide apart. Great when used with with decorator icing that also has almond flavoring.

Black Forest Cake I

Reviewed: Dec. 23, 2006
This is impressive! Looks like it came from a fancy bakery and tastes as good as it looks. Be careful not to overbake the cake which causes the dryness some have complained about. I used canned cherry pie filling (about 1 1/2 cans). I might add a little almond extract to the filling next time

Banana Pudding IV

Reviewed: Nov. 26, 2006
This is amazing, no changes needed. I like to layer it in a glass bowl, it's enough to do 3 layers of wafers and bananas. A pretty dessert and people just go crazy over it. Make sure cream cheese is room temp. and mix it with the condensed milk till smooth so you don't end up with lumps. Also very good with banana cream/vanilla puddings mixed.

Rum and Sweet Potato Casserole

Reviewed: Nov. 23, 2006
This was a nice change. I cut the sugar to 3/4 cup. Used 1/3 c. Myers dark rum and the rum flavor is pretty strong but we liked it.

Pumpkin Cake I

Reviewed: Nov. 23, 2006
I made this following a few suggestions from other reviews: 1/2 c. oil & 1/2 c. applesauce; split the sugar to 1/2 brown and 1/2 white, and added 1 tsp. baking powder. It's very good and moist, better the next day than fresh out of the oven. First time I made it was with orange cream cheese frosting and the second time just a powdered sugar glaze. It's a matter of preference if you like the orange flavor. I think I will cut back slightly on the cloves; I think they overpower the pumpkin flavor.

Favorite Old Fashioned Gingerbread

Reviewed: Nov. 21, 2006
I changed the cinnamon and ginger to 2 tsp. and the cloves to 1 tsp. Flavor is excellent but next time I will add 1/2 c. applesauce to add a little moisture. Will definitely make again.

Three Bean Slow Burn Chili

Reviewed: Nov. 21, 2006
My husband of 35 years says this is the best chili I've ever made. I cut back on a little of the heat (only 2 Habanero's, medium salsa, only 1 T. red pepper, and one of my cans of Rotel was mild.) It's excellent chili, but still a little on the spicy side for my taste. If you don't have taco seasoning on hand, use Taco Seasoning I by Bill Echols, it's great and you can cut back on the salt you put into it. P.S. I have now won two chili cookoff contests; today there were 23 other entries and I won a grill. Thanks for a great recipe!!!

Apple Spice Dump Cake

Reviewed: Nov. 7, 2006
I followed the recipe as written and it was wonderful! Made it in two square pans and shared it with a friend. She found it hidden in her kids' linen closet where they were trying to hide it from her because she was eating all of it!

Perfect balance between the brown sugar and vinegar IF you don't pack the brown sugar. Excellent meatloaf!

This is terrific. I have used it to grill hamburgers and steaks with extra sauce offered on the side. Have also poured it over a roast in the crock pot with excellent results. No changes!

Good recipe when I'm wondering what to do with leftover chicken, basil in the biscuits has to be added according to your taste.

Hawaiian Bread I

Reviewed: Sep. 24, 2006
I made with the stated ingredients on the light setting of my bread machine. Flavor was very good, but the texture was heavy and not fully baked. I would use a darker setting next time.

Best Spinach Dip Ever

Reviewed: Sep. 22, 2006
Had to leave out the water chestnuts, but this is great! The leek soup really makes the dip. I used a 10 oz. pkg. of spinach and it's just right. Definitely needs to chill overnight to blend the flavors.

Frank's Famous Spaghetti Sauce

Flavor is great and my husband didn't have a clue he was eating ground turkey :-) With the addition of 1/2 tsp. red pepper flakes and lots of fresh basil instead of dried, I think it's a 5* recipe. recipe

Easy Cinnamon Fudge

Reviewed: Sep. 19, 2006
If you use real butter, good vanilla, and sift the dry ingredients (measure the sugar before sifting), there is no problem with either the flavor or consistency. This couldn't be any easier, since it isn't cooked....if you don't like the consistency *add more powdered sugar*!! It does make a very small quantity so double the recipe for an 8" pan.

Ground Beef Curly Noodle

Reviewed: Sep. 15, 2006
My husband absolutely raved about this which was a little embarrassing because it took absolutely NO effort or skill. I made it for him again a few days later, subbing a can of Rotel tomatoes and using 2 packages of Ramen noodles. Had to add a little water. It was pretty spicy, but he liked it even better and ate the entire recipe himself. This has to be the quickest meal I've ever prepared.
