Lemon Delight

Stephanie's Freezer Spaghetti Sauce

I scaled this recipe to suit the amount of tomatoes I had to use. I also used fresh herbs from my garden and adjusted the amounts accordingly. I added mushrooms, a little balsamic vinegar and a dash of red pepper flakes. After simmering, the sauce was awesome. I froze most, but saved some to reheat for supper. It was great. I hope the the thawed results are just as good.

Slow Cooker Taco Soup

This was like watery chili. Although the flavors were good, they weren't especially 'taco-y'. I didn't mind the soup, but probably won't make it again. I make good chili, and the Six Can Chicken Tortilla Soup recipe from this site has more of the Tex-Mex flavor I was looking for.

Baked Potato Dip

Very good and so very easy. I don't care for the onion soup mix type of chip dip. When crunched for time, I usually just pick up some French Onion dip at the grocery. But, this is so much better, and doesn't take any real prep. Our small gathering devoured it.

Easy Cream Cheese Danish

Excellent and, indeed, easy. I used the suggestion of a previous reviewer and sliced the crescent roll dough (like purchased cookie dough) rather than roll it out. I managed 20 slices per tube of dough. After flattening the middles, I could put almost a tablespoonful of cream cheese filling in the center of each. I reduced the filling amount by half and still had more than I needed. (I just refrigerated the extra; I KNOW I will be making these again soon.) I drizzled each individual danish with the glaze. This was a wonderful addition to the buffet set out for a breakfast meeting. Not a single crumb left. My next experiment will be to add a spoon of blueberry pie filling along side the spoon of cream cheese mixture. My local bakery makes awesome blueberry cream cheese danishes. I don't see why I can't too. lol

Bacon-Glazed Grilled Onions

The flavor of these grilled onions was not out-standing. I, also, had problems with cooking. As the onions cooked and softened, they slipped out of the bacon as I turned them. I finally sprayed a cast iron skillet with Pam, set it directly on the grill and transfered the onion there (removing the wooden picks). I poured the marinade over all and then stirred frequently. I had high hopes for this, as grilled onions are a favorite with us...and I love bacon. However, I would have to recommend the Grilled Onions recipe found on this site and not this recipe. The other recipe is much simpler and always turns out great.

Chicken Tacos

This wasn't bad, but also wasn't great. I think that I prefer grilling (even on the George Foreman, if the weather is bad) chicken breasts seasoned with Montreal Seasoning and shredding them for tacos. I won't make this again.

Chicken Enchilada Dip

Yum! I used less mayo and 1/2 monterey jack cheese and 1/2 cheddar and leftover grilled chicken. I also heated it in a mini-crockpot rather than baking the dip. Everyone loved it. I did consider adding Rotel tomatoes or enchilada sauce, but am glad that I kept it simple. We loved it just as is.

Grilled Onions

Everyone who has tried these onions loves them. They are so easy to prepare, too. Our home is in a perpetual state of renovations and without air conditioning, at the present time. Cooking these on the grill outside really is great when the summer temps rise.

White Bean and Artichoke Salad

I read this recipe a few days ago and didn't actually refer back to it today when I prepared the salad. I used the basic idea and adjusted the ingredient amounts to suit my tastes. I drained and rinsed both the beans and the artichokes (to reduce sodium). I subbed diced English cucumber for the green pepper and lemon juice for the vinegar. I omitted the mint, but used fresh parsley and basil. I made less dressing, also...probably ony about a tablespoon of olive oil and a little less lemon juice. Still, my salad was very tasty. I will make this again, even just for myself for lunch.

Best Barbequed Burgers

My husband and I thought that the flavor of these burgers was OK, but disliked the texture. They were like meatloaf on a bun. The burgers may have been good served with a side of potatoes or rice (as a meatloaf), but not as a traditional cookout burger. I feel guilty throwing out the leftovers, but I know they won't be eaten. We will stick to 'non-filler' burgers for our grill.

Watermelon Fire and Ice Salsa

I made this for our 4th of July cookout. I also made my famous (and most-requested) fresh tomato salsa. At the end of the evening, there was none of my tomato salsa left and just a bit of this. Considering that guests included a lot people who are generally weary of new things, I thought this recipe was a success. Personally, I really liked the flavor. I combined the ingredients the night before and drained before serving. While my original recipe may get more a workout, I am sure this will be made again before the summer is over.

Famous Butter Chicken

I was sceptical about this. I have often been disappointed by highly rated recipes. However, this chicken had an excellent flavor and was very moist. I added extra seasonings (paprika, onion powder, etc.) to the cracker crumbs, skipped the egg (rinse your chicken breast with water to help hold the coating), and used less butter. I served with some sauteed vegetables (onion, peppers, mushrooms, zucchini in a little olive oil...and a couple of large spoonfuls of my homemade salsa at the end), and crusty rolls. Husband loved it. He commented that in cooler weather it would be great with a side of alfredo pasta or mashed potatoes. The bonus for me was that this was so easy. I will keep this in mind for those times that I have a million things demanding my attention...I will burn off the calories, then.

Anniversary Chicken I

I must admit that I was very sceptical. I have often been disappointed by recipes that have hundreds of great reviews. However, this chicken had a very good flavor and was certainly 'dressed up' enough to serve to guests. I used no oil (just a little water in the pan), much less cheese and real bacon (crumbled...I just can't do those 'bit' things). I would make this again. It was certainly easy and could be multiplied for a crowd.

Garlic Chicken

This is an easy recipe that yielded very juicy chicken. I seasoned the bread crumbs and covered for most of the cooking time. Hubby was late, and the chicken wasn't dry at all.

Blue Moon Salad

I really liked the fresh flavor of the cabbage, apple and vinagrette. However, after adding the blue cheese, it was inedible. I love blue cheese, but these flavors were not compatible. I wasted an big bowl of salad by including the cheese. I won't make this as written again. Maybe shredded cheddar cheese would be good, but I recommend leaving it out completely.

Easy Punch

Very easy and inexpensive. We used this at a wedding last weekend. Everyone loved it. I have used more complicated recipes in the past, but will use this from now on. I believe that you could experiment with different flavors of drink mixes in order to change the color of the punch.
