I was sceptical about this. I have often been disappointed by highly rated recipes. However, this chicken had an excellent flavor and was very moist. I added extra seasonings (paprika, onion powder, etc.) to the cracker crumbs, skipped the egg (rinse your chicken breast with water to help hold the coating), and used less butter. I served with some sauteed vegetables (onion, peppers, mushrooms, zucchini in a little olive oil...and a couple of large spoonfuls of my homemade salsa at the end), and crusty rolls. Husband loved it. He commented that in cooler weather it would be great with a side of alfredo pasta or mashed potatoes. The bonus for me was that this was so easy. I will keep this in mind for those times that I have a million things demanding my attention...I will burn off the calories, then.
