Mexican Bean Pie

This bean pie is off the charts. Get it? Pie charts?!?!?!! The end result of this recipe is better than pi. It's super delicious and packed with protein. We loaded ours with salsa, sour cream, and guacamole on top and the leftovers were quickly consumed.

Balsamic Bruschetta

The gods shine upon this one. This bruschetta recipe is off the charts. Use fresh ingredients, of course. The balsamic really makes it zing. I toasted my bread under the broiler then added the topping and sprinkled some mozzarella on top then stuck it back under the broiler until the cheese melted. Then bada-bing-bada-boom the best bruschetta ever!

Salsa Chicken

I don't eat-a-the-meat-a but I made this for the 'rents and they were big fans. We had a ton of extra salsa and cheddar cheese already so this recipe is a good staple because we always have the ingredients. They said it was super tasty and my mom's coworkers were eyeing her leftovers with jealousy.

Twice Baked Sweet Potatoes

Sweet! These things are yummy but MESSY to prepare. My daughter is 6 mo. old and LOVED this stuff. And the adults were just a big of fans. Make sure you don't scoop out allll the guts, it's easy to do because the skin peels off clean because you will be left with the potatoes laying on a sad empty skin-- not attractive and kind of reminds me of Kathy Griffin.

Canned Soup

This was alright but don't go out of your way to make it. If you have the ingredients on hand, go at it- it's good for cleaning out the pantry. But don't bother buying things special for this soup. It's a soup of convenience.

Broken Spaghetti Risotto

Cream of Asparagus Soup I

This soup is amazing! It's creamy and tasty. I used milk instead of half and half, just because that's what I had on hand. Added some garlic when sauteing in the beginning and omitted celery. That's what's up!

If this recipe was a guy and we went on a date it would have been a very awkward one. One where I had high expectations and loved all of his basic components but, at the end of the night, I dodged the kiss and changed my contact number.

Artichoke Pie

I added tomatoes and sour cream. This was awesome! I'm a vegetarian and I love dishes like this that my parents can eat as a side and I can enjoy as a main dish. No one was chokin' on this artichoke pie, knowatI'msayin'?!

Marinated Grilled Shrimp

These shrimp are off the charts! I grilled mine on the George Foreman since the weather was undesirable. I brushed the marinade on them while they were grilling. The sun may not have been shining outside but it was in my belly! You know what I mean... they were tasty.

'Out of Salad Dressing' Salad Dressing

This salad dressing is good and easy! I put it on my parent's 43rd wedding anniversary salad, served with grilled shrimp, & artichoke pie. Because of this awesome meal, they will probably be married another 43 years... so you know, that's all I'm saying...

Hamburger Pie

I'm a vegetarian so I subbed meatless crumbles for the ground cow. I also used instant mashed potatoes because I had some in the pantry that I've been meaning to use up. I added green peas, as well. This dish was delicious and seems super kid friendly. There were three of us and we ate the whole thing. My hamless pie was a huge success.

It's gravy, baby. This gravy is off-the-charts good. Packed with so much flavor, Flava Flav would be jelly. This beats the socks off anyyy non-veg gravy.

Andrea's Pasta Fagioli

Pasta Yumioli! I added extra cheese because everything is better with cheese (seriously, I want extra cheese on my cheese). I used veggie broth instead of water and added a can of diced tomatoes. Make sure you make your noodles separately because they are super absorbent and will SUCK all your JUICES. I sent some of this soup to my sister who was sick and it magically healed her. So I'm not gonna say this soup magically healed her but I will say it probably did.

Eggplant Mixed Grill

These veggies are HARDCORE \m/ yum. I made a whoppin' 3 zukes, 3 summa squash, asparagus, eggplant, and portobello shroomages and later annihilated them with my mouth and teeth. My taste buds partied all night long. MIXED GRILLED VEGGIEZ OR BUST, rock gods!

Easy Vegetable Pot Pie

HOLY WHAAAAAT!!!! This pie is too good and too easy! I made my scrumdiddlyumptious version with thawed frozen veggies and I pre-baked my crusty goodness 9 min. before filling it with the delicious oozy goozey yummy filling... yeaahhhh!!! THIS PIE IS INVITED TO ALL MY PARTIES FOR ALL TIME! I feel like a famous pie makerrrr.
