Apple Stuffed Chicken Breast

It's messy to make but it's pretty tasty. Perhaps a little too sweet for my taste because I'm sweet enough already... get it... Well, I probably wouldn't make it again unless someone requested it or I had the ingredients on hand.

Champagne Punch III

I loved this punch! It's exactly what I like in a drink -- it's tasty and it gets you drunk. Check. Check. Only one guest didn't like it, saying it was too tart and sour. Sourpuss aside, this was awesome.

Swiss Chicken Casserole I

Casseroles-- what's not to love? You throw it all into one dish and it cooks itself. This is a good and easy recipe. It's not a razzle dazzler but it's a good weeknight meal for monthly rotation. I liked the use of the stuffing- I used cornbread- it adds flavor and it's different.

Chipotle Crusted Pork Tenderloin

At first glance, this recipe doesn't have much going for it. It's title includes two of my least favorite words "crust" and "loin". But, rest assured, this recipe is off the charts. It will shake your loins with it's goodness.

Actually Delicious Turkey Burgers

'Actually' Delicious Turkey Burgers... strange name but they are 'actually' delicious, as it implies. Although, it also implies you wouldn't expect them to be. But cast all your doubts aside. These are delicious and the only changes I made were using shallots instead of onions, since that's what I had on hand.

Awesome Sausage, Apple and Cranberry Stuffing

My new favorite stuffing. I was stuffed with it by the end of the meal. We used cornbread stuffing mix instead of the bread the recipe calls for. SO much better!

Spicy Black Bean Cakes

Once upon a time there was a sad, lonely can of black beans in a pantry. It dreamt of the day it would become something much more than the sum of it's parts. One day a beautiful maiden plucked out the can of black beans and magically transformed it into the most deliciously fantastic black bean cakes ever made then married it to a perfect sauce and they lived happily ever after.

Coconut Shrimp I

Crunchy coconut heavenly delicious shrimp goddesses and gods-- can you tell the gender of shrimps... shrimps? or shrimp?... do they have genders?... whatever these androgynous beauties may be they are also delicious and this recipe is genius. Keep in mind that beer batter is always a plus because the leftover beer can't be wasted.

Crispy Edamame

Easy, quick, few ingredients, delicious taste-- can you ask for more from a recipe without getting greedy? I let these sit under the broiler to get extra crispy after the suggested time/method in this recipe. This is an edamame I'd like to eat again or, as I like to say a EILEA. I hope it catches on.
