Fish Chowder II

I liked it a lot. I used only two cups of milk but added some frozen corn and a scoop of basil pesto just because I had it on hand. I wished I had cut the bacon into smaller sizes but it was easy to put together and it made a LOT!

Chicken and Sausage with Bowties

I made this last night after work with chicken left over from a grocery store chicken. Added some mushroom, fresh spinach and because I had it, spaghetti sauce instead of tomatoes. It all went together easily and I had the leftovers today for lunch and it is even better.

Applesauce Oatie Cookies

I used old fashioned oats and the cookies turned out great. Perhaps chewier than using quick cooking oats, but I thought that is a good thing. I used extra raisins as I don't like chocolate or nuts in oatmeal cookies. It is a good way to use up apples after fall apple picking. Yum.

Sweet Corn Bread

I made this cornbread today using stone-ground red corn meal. As suggested in one of the Reviews, I used 1 1/2 cups cornmeal and 1 cup flour and did not need the entire 11/2 cups of milk. I thought it would be too soupy. I did use up some half and half as part of the milk. This is the most incredible cornbread I have ever made and I have baked a lot over the years. I just have to stop nibbling on it or it will be gone by dinner time.

Low-Fat Broccoli Soup

I used this as a base for using up broccoli, a couple handsfull of spinach, 2T jarred garlic. As I did not have evaporated milk, I used skim. The cornstarch thickened it all very well. I also blended the whole amount, not just half. Salt and fresh ground pepper rounded it out and it has a light, refreshing taste that I bet will be even better tomorrow.

Salmon Chowder

I pretty much followed the recipe except: Used two cloves of garlic and half a sweet potato, which gave it a great color, one tbsp fresh dill and 1 cup cream instead of evaporated milk. After potatoes were cooked i put half in blender to give it thickness. It was heavenly and made so much we have to invite neighbors over tomorrow to finish!

Bake Sale Lemon Bars

I agree with Jennifer below. I did the recipe just as stated except tried only 1 cup sugar and it was perfect. I had never made lemon bars before but needed to use up some lemons used for their zest for another recipe. This is a keeper in my opinion. Sunflower Janie, Washington, DC
