Eggplant Parmesan II
This was very good. Even my children one of whom is picky when it comes to veggies loved it! I did take the advice of baking the eggplants at 450° for seven minutes on both sides, I also added fresh basil and parmesan to the bread crumb mixture. I have never cooked with eggplant before and was surprised at how easy this was. This dish will definitely go into our regular dinner menu.

Broiled Tilapia Parmesan
This dish is perfect! The only thing I did differently was use fresh basil and I added fresh parsley. I've made this numerous of times for my family and friends.

Chicken Tequila Fettuccini
I have made this recipe SO many times, and let me just say it is FABULOUS! I do however use more cilantro, garlic, jalapeno, and peppers than it calls for. I also add a cornstarch mixture to the sauce before serving to thicken it up.
