Best Spanish Rice
MUY DELICIOSO, I read some of the reviews and made a few changes because of them. PERFECTION! I used brown rice for its nutrients and reduced it to 1 1/4 cups, added a little more broth (2 1/4 cups) and also added a tsp of cumin and cayenne pepper, salt & pepper to taste. It was delicious! VERY IMPORTANT TO NOT PEEK DURING THE COOKING PROCESS. Since I used brown rice I added more cooking time -- 30 mins. Then I let it sit another 15 mins. before I took the lid off. Also, you really want to sauté the rice till it looks transparent before adding the liquids and that will ensure a fluffy result, not mushy. My family absolutely loved it and said it was restaurant quality! Definitely a keeper. Mahalo!

Chicken and Lentils
This was delicious! I took a couple of the suggestions I read -- I used chicken breast cut into cubes, and for seasoning I eliminated the Rosemary and used 1 tsp. each of Basil, Cumin, and Turmeric. I was a little more generous with the chicken broth cause I didn't want it to be dry, I used a total of 16 oz. It was the perfect consistency for my husband and I, that of a lentil stew. I will definitely make this again, and the next time I think I'll add a little chopped parsley right before serving. Mahalo!

Slow Cooker Venison Roast
I used a nice piece of venison rump, added 1/2c. dry white wine and Braggs instead of soy sauce, cut up a carrot and a couple of potatoes. It was delicious!
