Chocolate Meringue Cookies

These were yummy! I modified based on the suggestions of another reviewer. I reduced the sugar to 1/2 cup, boubled the cocoa (I used Frys), and upped the chips to 1/2 cup. I added the cream of tartar and vanilla to the foamy eggy whites, and once I had soft peaks, I started slowly adding the sugar to a running mixer. I was worried when I lost some volume while folding in the cocoa and chips, but they still turned out great. I've been looking for a way to use up egg whites when I need a lot of yolks for home made ice cream. Most ice cream recipes call for 8 yolks, so next time, I will try doubling this recipe to use up 6/8 egg whites.

Soft Chocolate Cookies

Very yummy cookie, but it needs a little tweaking. I tried the recipe exactly as written except subbing 1:1 golden flavour crisco for the butter (did not dust with icing sugar.) I see that the recipe actually needs a little more sweetness. Not sure i'd want to go the filling/frosting route that many have tried. The second batch is in the oven now ....I added some SS chocolate chips to the next batch in the oven now. Will continue experimenting. I like idea of raspberry extract instead of vanilla. WIll try that next time. I did not have any trouble with the batch being sticky I'm not sure it needs the fridge time. I used a large cookie scoop and then flattened with my hand. My kids compare these to a chocolate bearpaw cookie.

Key Lime Cheesecake I

I normally don't rate recipes, but I brought a small piece to work with my lunch, and I'm sitting here wishing I'd brought a bigger piece! This was sooooo good. Made a few changes (after reading all the reviews). I used Nilla Cookies for the crust and added 1 tsp of cinnamon. I used 4 bricks of cream cheese and 4 eggs. I used 1 1/2 T of lime zest and 2/3 cup of lime juice. Also increase the sugar to 1 1/4 cups. Followed baking directions exactly and had a perfect creamy-coloured cheesecake (no browning) and no cracking.
