I have worked in restaurants for over 25 years. I have been cooking since i could stand on a chair and reach the stove. I have no formal training, just what i learned accross the way. Timing and execution are key components in the kitchen. I typically cook what I like to eat and will often change recipes to add my own ingredients.

I love the bbq. anything i can put on the grill but mostly ribs and steaks. I love mexican food, baking sweets, and italian food. I like picking up a new recipe every couple weeks of something i have never tasted.

i enjoy knowing enough recipes that at the restauarant I work at I can custom make food for my patron if they should have a special request. It is always appreciated.
My cooking tragedies
I dont burn stuff very often but it is my pet peeve. I do not like people touching my food while i am cooking so I will kick you out of my kitchen.
