Black Bean Salsa

I thought it was very good, though I made some changes. I only made a half batch, which was plenty. I used fresh tomatoes, though would probably opt for the ease of canned next time. I omitted the green onions and the bell pepper; the half red onion I used was still a bit overpowering, so next time I would use less. I skipped the avocado because I didn't think it would hold up well; I made this the night before so the flavors could blend and I though the avocado would turn brown and mushy. I also added cumin and pepper. It looked beautiful and had a nice kick. I served it with baked chips; a much healthier alternative to cookies and other party goodies.

Spiced Apple Coffee Cake

As others suggested, I split the sugar between white and brown. I added about 2/3 cup walnuts. I grated half the apples I put in, but they were looking like applesauce so I decided just to dice the rest. It was delish, but I had a very hard time getting it out of the pan.

White Chip Chocolate Cookies

Really good, very moist and chewy. Very sweet! Made exactly as recipe called for - you'll need some milk on hand to eat them, though!!

Easy Lemon Cookies

Chewy and flavorful, and quite easy to make. I used 1 tsp lemon juice + 1/2 tsp lemon extract. I regret not breaking up lumps in the cake mix before stirring in the eggs, oil, lemon.

Old Fashioned Mac and Cheese

I skipped the onion and reserved some of the white sauce to mix with bread crumbs to spread on top and it was really good. For cheese I used cheddar and two bags of a Mexican blend. Well received at our party, brought the kids in all of us!

Hot Mexican Spinach Dip

Like others, I omitted the evaporated milk, olives and wine vinegar, and I used hot salsa. It was delicious, and people hovered over it saying "I can't stop eating it!" (including myself).

Easy Lemon Bars

A big hit and truly easy! I made 1.5 times the filling and used 4 tablespoons of lemon juice. These were even better the next day, they need time to sit!

Shortbread Christmas Cookies

Very good, everyone liked them. A bit surprising how much time it took to make and ice them! Made as hearts for valentine's day, left some plain and iced and iced/sprinkled others. I liked the iced ones best, but I have a bit of sweet tooth!

Baked Brie in Puff Pastry

WOW!! That's what EVERYONE said. WOW! I followed the advice of VERONIKA S and added apricot preserves and brushed the dough with butter before freezing. We wound up having to bake it for around 30 minutes before it was warm enough inside, but it was worth the wait!

Potato Leek Soup III

The soup was fantastic, every last drop went at our Oktoberfest party. Like others, I substituted 1/2 c margarine for butter, and 1 cup skim milk + 1 cup light cream for the heavy cream. I also used vegetable broth (vegetarian), but put bacon, cheddar and parsley on the side (which was also popular!).

Gingerbread Boys

Got a lot of rave reviews, lots of people asked to take them home. Made for our Oktoberfest party in heart shapes. Put them out undecorated and left icing with them and kids had a great time decorating the cookies themselves...kept them busy! Like others, I left out the orange zest and corn syrup, but added 3 tablespoons molasses.

Buttery Soft Pretzels

Got a lot of rave reviews for these for our party, and they were all eaten. I did add 50% more sugar, which made them a bit sweet but really tasty! Wanted bigger pretzels and had a really hard time getting the dough rolled out long enough. Finally resorted to using a rolling pin, but then had a hard time getting them to roll back into nice dough for pretzels. So the pretzels looked a bit deformed, but since they still tasted great, who cares!?
