Brooke's Best Bombshell Brownies

Just made this today and they were SOOOOOO amazing and gooey!! I hate it when brownies are cake-like and spongy(why i never make scratch brownies) but these were very chocolaty, moist, gooey and everything a perfect brownie should be! WAY better then box brownies. The only thing I did differently was only added 2 1/2 cups sugar because thought 3 cups would be overly sweet. I also used half bittersweet and half semisweet chips! Came out perfect! :)

Eggplant Parmesan II

This was really good! I only used 1 med/large eggplant and made it in a 8x8 dish and it was just enough for myself for a few days! I did do the salt process with the eggplant, but I don't think I cut them thin enough because they weren't as soft as they should be. Maybe I also shouldve baked them longer too. Like 10 mins on each side. And I would bake the entire dish longer too. But overall still delicious! Will be making again! (I also added a layer of mushrooms to it...yum!)

Soft Oatmeal Cookies

These are the absolute best oatmeal cookies I've ever eaten! I made these recently for a family reunion of over 100 people and they were definitely a hit and everyone was asking about them! I didn't change anything about the recipe and I even let the dough sit in the fridge for several hours before baking. If you do refrigerate the dough then you will need to press the dough down with a fork because they didn't spread out much even after 10 mins in the oven. They were thick and chewy and just perfect; and I've never made oatmeal cookies before. I highly recommend this recipe!

Delicious Pineapple Muffins

I just tried this recipe out today and they are very delicious! I did what others suggested and used room temp. Butter for the topping and I added a whole cup of freshed chopped pineapple in the batter. I did not used muffin cups and poured directly into the muffin pan, but used real butter to grease the pan and they came right out without any problems! I know that different ovens vary on baking time and mine only took about 22 mins to bake or else they would have burned.
