Balsamic Vinegar and Ginger Bok Choy

It might have been my cooking, but it came out a bit to bitter for my tastes. I would prefer to use soy sauce instead of balsamic vinegar.

Spaghetti Squash I

Though I used pasta instead of spaghetti squash, I really enjoyed this dish. I would saute mushrooms with this as well to make it even better.

Quinoa and Black Beans

This is an awesome vegeterian recipe that goes well with many other dishes. I would personally put less corn into the dish and add more beans and spices.
