Pork Tenderloin Diane
Easy and quick, the kids said after dinner to keep this recipe in the "make again box"!! I read the reviews and made a few changes. After cooking the pork I doubled the sauce, added a can of vegetable broth to deglaze the pan, along with 1/2 lemon and 1/2 pineapple juice (we were having pinapple with dinner) used yellow mustard and Chinese spicy mustard (no dijon in the fridge) worcestershire and thickened with cornstarch and water it made plenty of sauce for the meat and the rice. We will make this again.

Absolutely Ultimate Potato Soup
The recipe is good, but I was not prepared for all the prep work. Maybe it was because I was making dinner while helping the kids with homework, snack etc. In addition to the all the prep, the recipe has you make the cream after you get the soup cooking. I should have waited 10-15 minutes before starting that part of the recipe. I had it finished and had to let it sit. I added some of the stock to it when I was ready to add into the soup, it warmed it up and thinned it down. My husband didn’t like the Tarragon flavor next time I will leave that out, I did not add the cilantro because my family does not like it. I used half and half instead of cream and it worked great.I would wait to put the bacon in, a lot gets blended up and that is my kids favorite part.

Hamburger Goulash
I had to add 1C of water while it was cooking and another 1/2C of water after I put the noodles into it (we live at high altitude). I substituted carrots for green beans based on my family’s preference. My husband asked for seconds, normally he is not a fan of one-dish meals, but he commented, "it really doesn't look that appetizing but it tastes really good". I will make this again, I would like to try it without the potatoes and add more noodles.
