Good Old Fashioned Pancakes

These pancakes came out fluffy, moist and tasted delicious. I made two batches this morning, but I screwed up the first batch by forgetting the melted butter. But is was just as well as I thought it was a little salty (and I actually like salty food!) So I made a second batch and cut the salt by half and it came out really great. The only reason I'm giving it a 4 star as opposed to a 5 star is that, to be honest, the pancake was not substantially better than the Krusteaz pancake mix we buy from Costco. Making the Krusteaz mix is easier, faster and less cleanup. So... the edge goes to Krusteaz. But if you take pride in making things from scratch and have time to spare, then this is a great recipe!

Joey's Bread Pudding

I was looking for a bread pudding recipe that was moist and more on the custardy side. Husband says that most bread puddings are too dry. When I made this he was very happy! I took it to a potluck and everyone loved the recipe. I made it twice and both times it came out deliciously. This is a very rich recipe... the only thing I did differntly than the recipe is to increase the cinnamon by 1 tsp. I used what is called Hawaiian Sweet Bread. This recipe is definitely ONO and a keeper.

Chi Chi Dango Mochi

This recipe came out terrifically! I live in Hawaii and buying Chi Chi Dango is expensive relative to the ingredients and ease of making. (About a dozen 1.5 inch pieces will sell for $5!) So I decided to find a recipe and make it myself. I've made it three times within a week and each time it has come out perfectly. I will share some lessons. For some reason, some stores only have 13.5 oz (not the 14 oz in the recipe) cans of coconut milk. It was not a problem. Also, if you let your kids help you with the potato starch dusting, make sure they go easy. To them it looks like powdered sugar so they think, the more the better. I ended up individually dusting off the excess from each piece. I agree with the previous reviewer to make sure the pan is completely cool before removing so that it keeps its shape. Lastly, trim and discard the hard edges. (The sides get crisp as it is against the pan.) I shared the results with many different people and they all said it was the best they ever had. Bev's Orange Chicken

This was very easy and relatively quick. I used boneless, skinless thighs. Unfortunately, my family did not like it. They thought it was "sour" which I interpret as meaning "tangy." I don't thing I'll be making this again.

Sue's Hot Fudge Sauce

The sauce was delicious. However, next time I will try it with unsalted butter. I would have given the recipe 5 stars if it was a little more chocolatey. So next time I will also put in more cocoa. The texture was nice and thick though. With a few modifications, the recipe is a keeper!

B and L's Strawberry Smoothie

The smoothie was delicious and not too sweet. Tasted more like a frozen yogurt dessert than a smoothie. Although I was looking for more of a "Jamba Juice" type smoothie, this was good.

Basic Ham and Bean Soup

This was a very easy recipe for a delicious soup. I followed another reviewer's reccomendation to soak the beans overnight. Unfortunately, the beans came out a little too mushy. Next time I would soak them probably a couple of hours less. I also used half chicken broth and half water. As such, there was no need to add any salt. The soup was a hit at our home.
