Taste of Home Candy Bar Brownies

Reviewed: Mar. 11, 2003
The best brownie recipe I have ever tried, and I have tried a lot! Don't mess with this recipe, follow it exactly--it is perfect. It made a huge batch, and the center was cooked to perfection yet the outer ones were still soft, too.

Blackened Tuna

Reviewed: Mar. 11, 2003
My family doesn't really care for Cajun food, but everyone likes this dish. In fact, we usually have it once every week or so because it is so quick and easy on those busy days. Awesome recipe!

Easy Slow Cooker French Dip

Reviewed: Mar. 11, 2003
I love French dips, but this one is by far the best I have ever tested, including in restaurants. The aroma of it cooking all day is incredible. The sauce is very flavorful, and the meat is unbelievably tender and juicy. Yet it is a no brainer recipe--simple and quick. And clean up is a breeze since only the crock pot is used for both the meat and the sauce. Everyone should try this! Thank you for a great recipe!

Pepperoncini Beef

Reviewed: Mar. 11, 2003
This is unreal!!! We only used a very slight amount of mayo on the rolls before adding the beef, cheese, and peppers, and it was delicious. I can't eat another deli sandwich now because none can match this. The younger kids even liked it (I didn't put the peppers on their sandwiches). The meat is unbelievably tender and flavorful cooked like this.

Mrs. Sigg's Snickerdoodles

Reviewed: Mar. 10, 2003
My daughter and her friends made these for youth group, and everyone loved them. One of the boys came up to her later and told her these were better than his girlfriend makes, and he loves her snickerdoodles. He relayed that these stayed nice and soft for days without careful sealing. Ours didn't last long enough to find out. The girls did substitute lemon juice for the cream of tartar, and there was no bitterness.

Easy Cajun Jambalaya

Reviewed: Mar. 10, 2003
We found this recipe to be very bland. The rice didn't cook well; I think the rice should be cooked individually first and then added. My kids picked the meat out and said that it had lost its flavor. We found something else to eat for dinner that night and threw the rest of this out.

Romantic Chicken with Artichokes and Mushrooms

Reviewed: Mar. 10, 2003
This recipe is incredible. It tastes gourmet yet is so simple. A gentleman from my husband's work stopped by unexpectedly the evening I was trying this recipe, and I was a little nervous about serving it. He went to work the next day though and told everyone that was the best chicken he'd ever had! My kids liked it as well and even ate the artichokes! I almost always tweak recipes a little, but this one is perfect the way it is. Thank you!

Lower Fat Banana Bread I

Reviewed: Mar. 10, 2003
I've tried a lot of banana bread recipes, but this is the best! The crust gets nice and golden but remains soft. The bread itself is incredibly moist. I substituted orange juice for the water and added a handful of carob chips and a handful of chopped macadamia nuts (I know they are high in fat, but I couldn't resist) and then sprinkled just a little bit of coconut on top. What a treat! Thank you for such a wonderful recipe!

Chili Cheese Dog Pot Pie

Reviewed: Mar. 10, 2003
My whole family loved this recipe--my husband, my teenagers, my toddler, and everyone in between. I used homemade chili, turkey dogs, and jack cheese so I wouldn't feel so guilty. To add a little something more to it for the older kids and adults, I topped each serving with a dollop of nonfat plain yogurt, some green onions, and a dash or two of hot sauce. The younger ones ate it as is from the oven. I used a homemade biscuit mix and halved it as recommended by other reviewers, but I thought it ended up a little skimpy. I think reducing it about 1/4 would have been better. This will definitely be a regular on our menu! Thanks for a great recipe.

Greek Lasagna

Reviewed: Mar. 10, 2003
I followed the suggestions of other reviews and halved the amount of pasta, doubled the feta cheese, and cooked it in layers. Thank you, everyone! It turned out great. I used flavored feta cheese and added spices typical of other Greek recipes I have (since I couldn't find a Greek spice at the store), and it was very flavorful. I layered it pasta first, then the feta cheese, then beef, tomatoes, and finally Parmesan. I added a clove of garlic to the beef and onion during cooking. This is also where I added 2 t. chili powder, 2 t. ground cumin, and 1/4 t. ground red pepper along with the 2 t. cinnamon. I drained the tomatoes of their juice and added 3 T. of lime juice to them. My whole family loved it, and I will most definitely make it again...soon.
