Peanut Clusters
I tried this recipe with lightly salted roasted peanuts and dark chocolate chips mixed with white chocolate chips. It was great! I tried it with almonds. Again it was great! I tried it with raisins using milk chocolate chips and then I tried it with pistachios using dark chocolate chips. Both were fantastic! This is a very easy recipe. I didn't leave the candy out to harden naturally the first time, I put it in the fridge and the chocolate was a bit hard. The next times that I made the candy, I let it set at room temperature and it came out perfect. There's no baking involved but it did take some time to harden. Here at my place it took 6-7 hours. It might vary from place to place depending on temperature I think. I also used the microwave to melt the chips. I heated them on high for 30 seconds and then stirred really well then heated again, etc. I think it took about a minute and a half to two minutes. The chips do melt as you stir them.

Jalapeno Salsa
I loved this salsa, my family loved this salsa. I did add to the recipe a bit. I added more jalapenos, I added a few tabasco peppers and a few green chile's. Being from NM, we like it mega hot! Plus I had an abundance of all three of the above peppers and needed something to do with them!! I also doubled the garlic. I used dry cilantro and used only 1 and a half tsps. This recipe was very yummy, however, I think next time I will use a bit less onion and see how it tastes. I also think that the next time I make it, I will process it so I can make more and keep it for a longer period of time. Very, very easy recipe to make, thumbs up!!

Homesteader Cornbread
I love this recipe!!! It is almost like a cake, very moist, very good tasting. What I did to change the recipe a bit was to put 1/3 cup white sugar and 1/3 cup of brown sugar instead of 2/3 cup of white sugar. I ended up letting the cornmeal and milk mixture sit for 15 minutes. Not on purpose!! I had something come up and when I got back to the recipe, it had been 15 minutes. After mixing all of the ingredients, I then added the eggs and oil at the very end. Don't know if this made a difference or not. I will make this recipe again and again!!
