Caramel-Glazed Flan

I love flan, but I hate the fat and etc. that comes with the flan. This is an excellent alternative, you'd never know that this was lower in fat and cholesterol. I cooked exactly as the recipe reads. It was wonderful.

Deep Dish Layered Salad

It's a great salad recipe to make ahead and bring with you on a picnic. The dressing was a nice touch of sweet and tang that the adults liked, the kids were not so thrilled with it. the only thing that I would change is the amount of salad dressing placed on top. I cut back onb the amount and found it still to much.

Foil Wrapped Veggies

The potatoes came out tender and moist. While I didn't have any green beans, I did have the rest of the ingredients and it was a success. A very easy way to have potatoes in the summertime when it too hot to bake them.

Best Italian Sausage Soup

I added 1/2 Cup Onions, 1/2 tsp Basil, 1/2 tsp italian seasoning, 1/2 tsp red pepper flakes, 1 beef bouillon 1/2 Cup of water. At the last 20 mins of cooking I added 1/2 Cup Orzo. This really spiced it up and gave it more hardiness. Not too much was left to this meal of a soup. I served it with Corn Bread. Great meal on a cold day.

Fish Chowder

I am from New England so I added a typical NE touch by frying up the vegies with salt pork. I also added 1 1/2 tsp of Old Bay Seasoning, giving the chowder a little more zip. My husband is allergic to all shell fish, so I put in chicken broth instead of the clam juice. No left-overs here! Now that's what we call Chowda!

Roast Pork with Maple and Mustard Glaze

Portuguese Sweet Bread I

Instead of cooking the bread in my machine, I used the dough only cycle. I then placed the dough on a pizza stone and brushed it with egg whites. I baked it at a 350 degree oven for 35 mins. It came out perfect, the bread had just right amount of sweetness, density and chewiness that can't be store bought. Yummy!

Peppy's Pita Bread

I thought that I would give this try, since getting good pita bread in our area is difficult. I found these to be a little dry, it did have some of the chewy texture found in fresh pita bread. I was more time consuming that I had expected, but I would make them again.

Cheese and Broccoli Chicken Soup

I added 1 tsp of thyme and 1 tsp of tarragon when the broccoli was simmering. I used fat free half and half. It was very filling and just right for dinner on a cold NE night.

Alaska Salmon Bake with Pecan Crunch Coating

Rib Eye Steaks with a Soy and Ginger Marinade

I have used thie recipe many times and we all love it. I don't usually have beer on hand, so I subsitute 1/2 Cup of Olive Oil. I also marinade it for 1 - 2 days for the full flavoring. Yum!

Russian Tea Cakes III

I followed the recipe exactly, while the flavor and the texture were perfect, the cookies flatten out during the baking process. I have made these cookies before, but not with this recipe and they stayed round. So they were tasty, just not as attractive as they should be. Anyone have a solution to this problem or have the same thing happen

New York Italian Pizza Dough

Perfect! I made it with my mixer, I had to add more flour before I put it in a bowl to raise the dough. I only waited 1 hour for it to rise and then I rolled it out. I made separate pizzas and put the dough on the grill. It made a perfect chewy and tasty crust. Thank you!

Pork and Veggie Soup

Yum, yum, yum! With a few changes for my families taste. I omitted the salsa and added 2 Tbp chili powder, 1/2 tsp red pepper (we like spicey!) 1 box of beef broth and let that simmer on the stove for 1 hour, then added 1/2 C of brown rice and simmered for another 45 mins. The house smelled great. I served it with corn bread and a dab of sour cream in each bowl.

Eric's Best New York Style Cheesecake

I found that my cheesecake came out a little dry and not as dense as I like. I did half the recipe and use a smaller pan, as I was only having 4 people over for dinner. I don't know if that made a difference.
