Spanakopita II

Reviewed: Nov. 26, 2008
Very tasty, though time consuming to make. I froze half the batch and they still tasted great two weeks later. I also made miniture triangles out of mine to be served as appetizers.

Jalapeno Popper Spread

Reviewed: Nov. 10, 2008
Made this the other night and it was an instant hit. I omitted the green chilis, doubled the jalapenos, and topped it off with panko crumbs sprayed with Pam. I then baked it at 375 until bubbly and the bread crumbs were brown (about 25 min). People labeled the dish "Heaven in a Bowl". And yes, I did have to give the recipe out.

Country Apple Dumplings

Reviewed: Mar. 4, 2008
I made these the other day and they were divine! I made a few changes: I used 2 tsp of cinnammon, 1 1/2 cups of butter, and Sprite instead of Mt. Dew. I think it's important to mention that these taste way better if you pour the soda to the sides of the dumplings, not directly on them. This allows the cinnammon mixture to form a nice crust on top of the dumplings, otherwise I think they might come out soggy. These are best served hot and with vanilla ice cream. Yum!!

Salmon Patties I

Reviewed: Jan. 24, 2008
I followed the recipe exactly and thought the patties were a bit bland. Next time I'll do as others suggest and add some garlic salt and pepper to it.

Strawberry Pretzel Salad

Reviewed: Jan. 19, 2008
Had some friends over today and made this dish. I used two packages of frozen strawberries (about 4 cups worth) and it came out wonderful. Everyone thought it was de-lish.

Butter Snow Flakes

Reviewed: Dec. 18, 2007
I made these cookies two days in a row because they were so good. Both times I substitued butter with butter flavored shortening. The dough was too dry for me to use in my press, so the first time I used about 1/2 cup milk and the second time I used 3 oz. more of cream cheese. It came out great each time. I had a neighbor stop by and ask what I was making because they smelled so good. I gave her some of the cookies and she couldn't believe they weren't store bought they were so delicious.

Cream Cheese Squares

Reviewed: Dec. 7, 2007
I must have done something wrong because I thought these bars tasted like sweetened lard. I followed the directions exactly and although it looks pretty, it tastes disgusting. I won't be making these again.

Annie's Fruit Salsa and Cinnamon Chips

Reviewed: Oct. 4, 2007
I used blackberries and blueberries instead of raspberries and kiwi and it came out great. The chips are better slightly overcooked...they come out crispier.

Sausage Stuffed Jalapenos

Reviewed: Apr. 28, 2007
I combined this recipe with the Stuffed Jalapenos III recipe and wrapped bacon around the outside of the jalapeno. It was a HUGE hit and I was asked for the recipe by half a dozen people. Thanks for sharing it.

Roast Sticky Chicken-Rotisserie Style

Reviewed: Apr. 1, 2007
I followed the recipe exactly, but raised the temp to 350 and cooked my chicken for two hours because I didn't have 5 hours to wait. I also covered it the first hour, basted it with butter, then cooked it uncovered the last hour. It came out perfect.

Taco Seasoning I

Reviewed: Mar. 31, 2007
I have to give this five stars...my husband, who doesn't care for tacos and will barely touch them when I make them, said this was way better than any of the packaged seasonings I had used in the past. He ate four tacos this evening (a record for him).

Kettle Corn

Reviewed: Nov. 18, 2006
Great recipe! I burned a tiny bit of the popcorn on the bottom of the pot, but everything else came out perfect. Be sure to remove the popcorn IMMEDIATELY from the pot after it slows in popping because it burns quickly if kept in the pot for longer than a second or two. I added salt afterwards and it tasted just like something I'd get at the fair.

Restaurant-Style Hashbrown Casserole

Reviewed: Nov. 3, 2006
I used cream of celery soup instead of cream of chicken and it came out perfect. I also used diced potatoes instead of shredded potatoes. I will definitely be making this over and over again!

Firecracker Grilled Alaska Salmon

Reviewed: Jun. 18, 2006
This marinate had a good flavor, but I thought it overpowered the taste of the salmon itself. I marinated it for 6 hours and if I make it again, I'll probably only do it for 2 hours.

Avocado, Tomato and Mango Salsa

Reviewed: Jun. 18, 2006
I made this last night to accompany a salmon dish and it turned out wonderful. There weren't any leftovers and I received compliments from everyone on it. I used two large tomatoes instead of four and drained the juice from them so the salsa wouldn't be so watery. Other than that, I followed the recipe exactly as it is.

Mock Champagne

Reviewed: Mar. 30, 2006
I served this at a luncheon and everyone thought it was great. The only thing I didn't like about it was the pineapple juice made the drink cloudy. Nevertheless, it tasted fine.

Simply Lemon Baked Chicken

Simple to make and it came out great. I used boneless, skinless chicken breasts instead of a whole chicken and used two lemons instead of one.

This was easy to make and the husband loved it. I used the drippings as a dipping sauce.
