J.P.'s Big Daddy Biscuits

I was very happy with this recipe, as were my 2 kids. I used soy milk and soy based margarine because that's what I had on hand. They turned out great, so good in fact that I had to make a second batch right away, they are currently in the fridge waiting to be baked with dinner. Thank you so much for an easy and tasty recipe!

Cream Puffs

First batch, not so pretty. Not really sure what went wrong there,lol. But the following batched baked up hollow and golden, as expected. I only gave it 4 stars because I just wasn't impressed with the flavor, or lack there of I should say. Perhaps since I'm not really a pastry person my expectations were off. But my friend I was baking them with seemed quite happy with them. Biggest complaint is that you can only bake on one rack at a time because otherwise they don't puff up. So you are turning the oven to 425 for 10 minutes, then down to 350 for 20-25, then off for 10. Repeat!

Best Brownies

The frosting is really good, I did have to add a small splash of water to it though to make it smooth and spreadable. As for the brownies, I wasn't a huge fan, but I think I just prefer my brownies a bit cake-ier. I will for sure be using the frosting again and again!

Lemon Cupcakes

I didn't have my cupcake pan on hand so I went with 2 8-inch rounds. They came out really dense and chewy. Not impressed at all. I would have given it 1 star but I gave an extra because perhaps it bakes up better when made into cupcakes. But I was very disappointed.

Sturdy Whipped Cream Frosting

I only gave this 2 stars because as a fruit dip, it's amazing! However, as a frosting, this recipe is off. I tried it as it was written, also tried adding unflavored gelatin and a box of pudding. I have made 6 half-batches trying different techniques. None of them have been stiff enough to actually decorate with. I had my bowl, cream, and beaters chilled. Kept everything nice and cold, it just didn't get anywhere near "sturdy" for me. Oh well, I'll continue looking for a whipped frosting recipe, but at least I did get a great fruit dip out of it!
