Cheesy Baked Eggplant

Reviewed: Feb. 9, 2012
This was phenomenal!!! I made this for dinner as I'm back on low carb (for good) and I added a little bit of sausage to the tomato/spinach mix (for some protein and fat)...I also put some crushed up pork rinds on the top (5 minutes left on the timer) for an added crunch. Having it for leftovers/lunch now! Also - didn't have ricotta so I used cottage cheese and I used about 1 and 1/4 cup of sf tomato sauce instead of 3/4 cup.... GREAT recipe!

Fully Loaded Cauliflower Salad

Reviewed: May 28, 2012
At last minute (the morning of Memorial Day) our friends invited us to a cookout. They said they'd make the meat if we brought the sides. I knew they all (including my husband) loved the "baked potato salad" from the Fresh Market around the corner from us, but I am back on low-carb and needed something that would be similar for me (as I love the baked tater salad too, but obviously couldn't eat it...) and...This was AWESOME! I used full-fat sour cream and full-fat mayo as I am low-carb and low-carbers eat FAT (because it's good for you!) No, this is not low-calorie, as low-carb does not usually (ever) mean was WONDERFUL! I bought a block of white cheddar and shredded it, instead of using pre-shredded cheese. The friends who invited us over USUALLY make fun of my "low-carb creations" ... and they ate it up! note - if you want this to be low-er fat, go ahead and use fat free mayo (or low-fat, ff is gross, in my opinion, but to each their own)...and the same with the sour cream. Otherwise, go for the full fat as this was amazing! And I will be making it again and again!

Polish Sausage Kraut Skillet

Reviewed: Sep. 21, 2012
This was absolutely PHENOMENAL! My grandmother was Polish and used to make dishes so similar to this ... she's been gone almost 20 years now, but as I was making this the smell took me back to her kitchen. My husband absolutely LOVED this! I'm a hit or miss cooker either it's great like this, or I make rubbery fish (don't ask). I made it almost as written. Instead of the bouillon and water, I just used beef broth instead. I also didn't have any caraway seeds, otherwise it was cooked as written. Otherwise though, I wouldn't change anything - SO good and definitely a keeper!!

Spaghetti Squash Saute

Reviewed: Oct. 20, 2012
This was delicious!!!! I did use a LOT of butter (a full half cup just because we love buttah!) Tons of garlic and a half-chopped onion! We did add chicken sausages (chopped up links) to it and it was the perfect one-pot meal! I did cook the squash a bit longer (55 instead of 40), but my husband likes his veggees "mushy"...Thanks!
