Oatmeal Pancakes II

Zesty Slow Cooker Chicken Barbecue

The first time I made this recipe I prepared it exactly as written. I found the resulting dish tasty but too sweet for my personal taste. After making this several times my changes are as follows: decrease brown sugar to 1/8 cup and increase Worcestershire sauce to 4 tablespoons. Either way, this is an excellent recipe.

Easy Chicken Satay

My husband & I loved this recipe! We were cooking a late dinner so our chicken only marinated for 30 minutes. It still came out tender and flavorful. (I'm sure it would have been even more delicious after the full 2 hours.) The peanut sauce was phenomenal as written! I prepared per the recipe then tweaked it to my own taste preference afterward by increasing the soy sauce to a full tablespoonful. I cooked 1 1/2 pounds of chicken and it all disappeared. After the chicken was gone I snacked on carrots dipped in leftover peanut sauce. (I plan on using the remaining sauce on pasta and some stir-fried veggies.)

Hot Vanilla

I gave up chocolate & coffee for Lent. This recipe was a wonderful find! I substituted a cinnamon stick and heated it on the stove. It was too sweet for my taste so I added another cup of milk. I will fix this again using these changes (and possibly substituting a bag of spiced black tea for the cinnamon.)

Boston Baked Beans

I made this exactly as directed and was very disappointed. It completely lacked flavor and I would have preferred plain old navy beans. I managed to salvage the recipe by making another batch of sauce, adding more water and baking for an additional 45 minutes. My vote- it's not worth the time it takes to make. I guess it's back to doctored up canned beans until I find a better recipe.

The Best Lemon Bars

I've tried several recipes and this is the best. I did add the zest of two large lemons. I also microwaved my lemons for a few seconds to make juicing easier. The crust is tender and the filling is tart & creamy. I've found my go- to recipe!

Amish White Bread

Made as directed with the exception of brushing with honey butter the last 5 minutes of baking. Worked wonderfully for rolls! This is a dense bread recipe so make sure you (at least) let it double in size or it will turn out too heavy. Delicious!

No-Knead Artisan Style Bread

Super easy and delicious! Used a dough bowl instead of a towel for the second proofing then placed directly into the dutch oven. The hardest part of this recipe is waiting for it to cool. I will be making this again!

Heavenly Blueberry Smoothie

Use strawberry yogurt & 1% milk because it was what I had on hand. Increased flax meal to 1 tablespoonful & omitted honey because of the sugar in the yogurt. I may decrease the amount of yogurt and add some crushed ice next time just to suite my personal taste.

Zucchini Patties

Yum! These are so good. I used cheddar and colby jack cheese because it was what I had on hand. I was out of onion so I added onion powder. Also added 1/2 teaspoonful of Jane's Krazy Mixed Up Pepper just because I could. ;)

Smoked Salmon Mousse

I'm 8 months pregnant & I've been craving salmon mousse from a local restaurant that folded. This is not the same recipe... it's better! I used fresh dill from my herb garden and packaged lemon juice because it's what I had on hand. I will defiantly be making this again.

Slow Cooker Chicken Taco Soup

I used Yuengling lager and packaged taco seasoning. I also added 1 1/2 tsp. cumin, 1/4 tsp. garlic powder, and 1 TBSP. cocoa powder. I used one can of mild Ro-Tel and one can of original Ro-Tel.I made it on the stovetop because my husband left our crock pot at work. After tasting, I opted to add a packet of ranch seasoning. It is delicious!
