Chicken in Mushroom Sauce

Great recipe! Made some changes as others have. Sauteed onions and mushrooms then added the mushroom soup and milk while chicken was browning. Used garlic salt and more pepper than specified. Good flavor and quick and easy.

Wonderful Waffles

Outstanding waffles! The best we have ever had. We followed the recipe exactly they came out perfect. The brown sugar was the kicker, we had a rasher of bacon along with it, and the sweet and salty was wonderful.

Stuffed Chicken Breasts with Cornbread Dressing

It was outstanding! I took some of the tips from the others and added my own. I added mushrooms (fresh) to the saute of onions/green peppers. Also, added Italian Sausage, chicken livers are out, not much maybe over a 1/4#. With the chicken breast I browned them in olive oil and add a sprinkle of Italian Seasonings, they were not large enough to stuff so I layered them. Stuffing, chicken breast and more stuffing. Cream of Chicken soup with milk not water. I agree with others, the sage is the key. Along with it was mashed rutabaga, green salad and home canned cranberries. It was like a Thanksgiving meal, my gal who canned the cranberries said it was the best meal from this site she has ever had. It was quick and easy, and next time will try turkey breast. Oh, one last thing, I used Jiffy cornbread mix, made it ahead as a Johnny Cake and then after cooling, crumbled it. One box was the perfect amount.

Italian-Topped Garlic Bread

This was a big hit at a holiday party. Followed the recipe but used Italian mild sausage. I admit I used store bought garlic bread, and know one knew the difference. I suggest you broil the last two minutes. Did freeze several and had them a week later .... yummy!

Tender Pan-Fried Chicken Breasts

Great! Did as others recommended and cut back on salt and pepper. Had no Tarragon so used Herb de Provence. The dried mustard was the highlight! Also, cooked on a rack but had very little grease anyway. A keeper!

Best Ever Crab Cakes

Outstanding! Used Old Bay instead of Tarragon and Panko for the bread crumbs. Like others rolled the patties in Italian bread crumbs with a sprinkle of Parmesan cheese. Baked for 8 min a side at 350 then broiled for 3 min a side. Made a Cajun Ramoulade and there were perfect.

Italian Breaded Pork Chops

By far the best recipe for breaded pork chops. I have made it several times and its just great! The secret for the breading to hold is to let the chops rest for 15 minutes after breading them.

Sausage Casserole

Great recipe for any meal. Did add 8 large eggs. Cottage cheese was perfect and did bake the potato crust for 30 minutes at 350 first and then added the egg/sausage mix. Baked 55 minutes at 350 and came out wonderful. Also add salt/pepper/garlic powder to the eggs (1/4 tsp).

Bourbon Whiskey BBQ Sauce

Easy to make and followed the recipe exactly but used Canadian Rye. The only difference is we didn't strain it for we like our sauce chunky. We couldn't wait the couple of days so we had it on left over breaded beef cutlets. Took Texas Toast and made sandwiches with the BBQ Sauce on the cutlets and it was outstanding!
