Lemon Cream Cheese Frosting

This is a pretty basic recipe for cream cheese frosting. If you're looking for an especially sweet and tangy frosting, I would recommend omitting the vanilla extract and replacing it with another tbsp or so of lemon juice. More powdered sugar is what helps you achieve an excellent thick frosting for topping cupcakes with if you use a pastry bag and tip, or if you're in an especially crafty mood, piping out shells or roses and the like. It's what helps the icing hold its shape. If you prefer a thinner frosting you can use to spread over a cake, then, yes, you will want to use less powdered sugar. I personally find four cups to be enough, but that is just me. Rather than taking other reviews' word for this being "too thick" or "too thin," try adding the powdered sugar in 1/2 cup increments to achieve the frosting consistency you want. If it ends up a little thicker than you'd like, add a tbsp or so of milk at a time and mix it in well. Hope this helps, and happy frosting! ;)

Roasted Garlic Cauliflower

I'm not generally a big fan of cauliflower unless it's been mashed to mush. While this did not do much to improve the texture of cauliflower, it did add some fabulous flavor to an otherwise bland vegetable. I included some fresh basil and a pinch or two of oregano. My mother, who is even less a fan of cauliflower than I am, greatly enjoyed it; she even complimented me on it! "This cauliflower is delicious! How did you make it?" "Why, thank you, I just threw some- Wait, what?!"

Italian Portobello Sandwiches

This sandwich was pretty spectacular. I served it over flat pretzel bread with pepper jack cheese, and sauteed the bell peppers with the mushroom and onion. I also added about 1/2 a teaspoon each of dried parsley, dried oregano, and garlic powder (for lack of fresh garlic) to the basil mayonnaise dressing. The end result was admittedly very messy, but absolutely delicious. I never knew mushroom could taste so good!

Crab Salad III

I did not have radishes or bell peppers, and I didn't use any substitutions for them. I did, however, add bacon bits and craisins, and I discovered that this salad was pretty darn good. Even so, I can't help but think it would be so much better if it were made with real crab meat rather than artificial...
