Herbed Lentils and Rice

I was out of onion so I just left it out; I don't care for Swiss cheese so I left that out too. Turned out great. It's nice to have a basic recipe for making lentils with rice in the oven. I am going to try it with spinach next.

Banana Walnut Cornbread

I didn't find it necessary to mix the ingredients in a food processor. I just omitted the sliced banana at the end, and mashed and mixed the 3 bananas and the wet ingredients all together with a whisk. I paid attention to the reviews of this recipe that complained of "crumbliness;" so I added an egg along with the wet ingredients, and mine did not turn out crumbly at all. Additional changes I made include almonds instead of walnuts, and I added a teaspoon of salt. It's yummy!

Cranberry Chicken II

I like this recipe. I browned the chicken on both sides before pouring the sauce on and baking, so it took more like 30 minutes to get done. Also, I only used one packet of onion soup mix. Tasted great!

Southern French Dressing

I used only 3.5 Tb of sugar; 1 Tb (not one ts) prepared horseradish; 2 ts onion powder instead of fresh onion; garlic-flavored red wine vinegar instead of cider vinegar; only 1/4 cup oil; and I added (don't laugh) a dash of red vermouth. Very tasty. Will definitely make again.

Artichoke & Spinach Dip Restaurant Style

I, too, used the whole package of cream cheese. I also went ahead and added the entirety of the 16-oz jar of alfredo sauce, and the whole 8-ounce package of shredded mozzarella (it was more than a cup). I used raw garlic minced fine, and I added a few minced-up green onions and some canned nopalitos, drained and rinsed. The resulting dip is so rich and creamy and good. I like the bite of raw garlic, but I will not use as much next time; maybe just two cloves.

Vanilla Sauce

I made the changes suggested by other reviewers: used half the water, twice the cornstarch, confectioner's sugar. I also added half a cup of evaporated milk when I added the butter and vanilla. Not only very good on the bread pudding I made it for, but good cold the next day with store-bought molasses cookies.

Lemon Butter Cookies

These are very good. I used more lemon zest than the recipe called for, about twice as much. Also, keep a close eye on the cookies while they are baking. They will overbrown if you give them half a chance.

Black-Eyed Peas and Gumbo

I will definitely make this again. I made some changes. First, I used smoked sausage instead of ham. I also used two cans of ro-tel tomatoes with green chiles instead of chopping fresh tomatoes. I did not have fresh parsley, so I used about half the amount of dried. Finally, I added half a teaspoon of dried savory. And like a previous reviewer, I cooked the vegetables in with the roux, and because I used frozen okra I added it last. The gumbo is very good. Thanks for submitting it!

Baked Fried Eggplant

When I made these, I used plain yogurt instead of sour cream, and crushed seasoned Ritz-cracker crumbs for the bread crumbs. They were delicious. Thanks for the recipe.
