About this Cook
I come from a big family and I have lots of friends, so I have prepared food for an eclectic mix of vegetarians, vegans, low-fat dieters, low-carb dieters, lactose-intolerants, peanut-allergics, diabetics, and serious food-lovers.
My favorite things to cook
Dishes that my husband especially loves, because he is always so appreciative!
My favorite family cooking traditions
Tuna casserole with rainbow rotini and mushroom soup. Hamburger goop with rice. Bacon-topped cornbread. Mashed potatoes and corn pudding at Thanksgiving. Country ham and biscuits with red-eye gravy. Coffee.
My cooking triumphs
Pork tenderloin and steamed kale with lime sauce. I love it, my husband loves it, everyone I've served it to loves it, and it's all mine. It makes me happy to know I invented something people love.
My cooking tragedies
Don't ever use whole wheat flour to make a roux for gumbo. Just trust me.

Olive and Blue Cheese Ball
Thank you for this yummy recipe! I didnt make it quite as specified, but I'm sure it would be yummy that way too. I used black olives, as a few others have, because they come already minced up in a can that's the perfect size. I could not find fresh chives to save my life, so I used four green onions instead. I added the last little tiny bit of ranch dressing in the bottle, just because, and half an avocado all mashed up in the cheese, also just because. It's really good! Will absolutely make again.

Banana Walnut Cornbread
I didn't find it necessary to mix the ingredients in a food processor. I just omitted the sliced banana at the end, and mashed and mixed the 3 bananas and the wet ingredients all together with a whisk. I paid attention to the reviews of this recipe that complained of "crumbliness;" so I added an egg along with the wet ingredients, and mine did not turn out crumbly at all. Additional changes I made include almonds instead of walnuts, and I added a teaspoon of salt. It's yummy!

Cranberry Chicken II
I like this recipe. I browned the chicken on both sides before pouring the sauce on and baking, so it took more like 30 minutes to get done. Also, I only used one packet of onion soup mix. Tasted great!
