I must admit, when I found out that I was going to have to create my own original recipe using Fiber One as a main ingredient, I was more than a bit apprehensive. To be quite honest, the stuff looks like twigs. While I found the Haystacks cookies to be delicious
myself, many people had issues with the texture.
I wanted to find a way to get past that, and utilize this great cereal in a way that was yummy and fun.
I found inspiration in my five year old son...a notoriously picky eater who happens to be stuck on a donut kick at the moment. I thought to myself, "How can I make these better?"
It hit me like a bolt of lightning. Fiber One.
I used my food processor to make the cereal into a type of flour and then just started experimenting. Here's the recipe I came up with, and I must say, these little donuts are delicious!! Fiber
One® Baked Buttermilk Donuts
They are very sweet! You can adjust the recipe to suit your tastes....for example, don't add the Agave Nectar in yours. Also, topping them with a lemon glaze or some butter
cream would be a healthier choice than dipping them in chocolate! I made these for dessert for my kids though, and they loved them just as they were.
You have to give them a try.
There is no comparison to a freshly baked bakery donut, but for a Saturday brunch, these will do just fine.
