Chef John's Peanut Butter Cookies

Not good. Too much leavening, they were like pillows when cooked & the dough was sticky/hard to form.

Classic Peanut Butter Cookies

There is too much of a buttery taste. With twice the butter as other recipes, too much fat & greasiness as well. Cut the butter in half & add two teaspoons of vanilla extract to have a good recipe.

Potato and Ham Soup

Easy! Boiled ham bone from spiral-sliced ham until the meat fell off, used that stock & cleaned up/diced the ham from the bone. Used just 1 can cream of celery soup (due to salt from ham), 1 cup of milk (thickened with corn starch), left out the celery, added a pinch of garlic powder, added potato flakes for more thickening.

Texas Cowboy Stew

Changed the recipe as follows: for meat used 1.5 lbs ground beef & 1 pound hot breakfast sausage roll, used Bush's chili beans instead of plain pintos, 4 tablespoons chili powder, 1 tablespoon Tabasco sauce, left out potato & mixed veggies, used a can of green beans, left out the diced tomato with chile peppers, added a small can of tomato paste, added a tablespoon oregano. Turned out awesome this way!

Slow-Cooked Flank Steak

I don't think a slow cooker works well for most cuts of what are called flank steak. There's no connective tissue to break down, so for mine the juices just ran out & it became a hard piece of meat after about 4 hours. The flavor of the ingredients did not become incorporated into the meat. Marinating in this mixture might be better, in fact marinating in s a solution to tenderize before using a slow cooker would be better yet.
