Vegetable Quiche Cups to Go

I did slightly modify this recipe. I love, LOVE, spinach and feta cheese omelets. So, I adapted this recipe to taste like my favorite omelet. I used 3 Eggland’s Best Eggs, 1 package of chopped frozen spinach and ¾ cup of reduced-fat feta cheese. Next time, I’ll add two more eggs to even out the spinach to egg taste. Another plus, if you work outside of the house this is a good snack/breakfast to bring to work.

Mocha Ricotta Creme

I was skeptical about this. Especially after reading all of the rave reviews. It couldn't possibly taste this good. It was delicious. OK, I did take the advice from other reviewers and used my hand blender to create a smooth consistency. But that extra step was well worth it. Yummy.

Baked Eggs in Canadian Bacon Cups

I did not like this. I made a couple of them w/cheese for my husband. I added a handful of shredded low-fat cheese on top prior to baking. Those were a little better. But I definitely would not make these again.

South Beach Peanut Butter Cup

This is my favorite SB desert. Even my husband loves it. It is very creamy. It reminds me of soft-serve peanut butter and chocolate ice cream. Yummy yummy.

Surprise South Beach Mashed 'Potatoes'

I added 1/4 c. of reduced-fat cream cheese, scallions, bacon bits and reduced-fat cheddar cheese. Yummy. Although, if you are not a fan of mashed potatoes, like my husband, then you're not going to enjoy this regardless of the delicious additions.

Tuscan Grilled Steak

Dracula will not be a big fan of this dish, we were though. I love garlic and it was a bit (gasp!) strong for even me. With that said, we've made this several times already and will continue to do so. Easy and yummy.

Cherry Tomatoes

This is a wonderful side dish. Easy and delicious. The second time I made this, I chopped the grape tomatoes into fourths and turned the recipe into a salsa for over chicken. Yummy.

Red Velvet Cake

I've never eaten red velvet cake, but I've heard that is one of the most delicious cakes in the world. So, I decided to bake this one and well, ti was a disaster. I had to do something wrong, although I cannot figure out what it was. I followed the advice of other reviewers to remove the cake early and it was still overdone. The cake came out a pinkish color (not a chocolately-red color) and was a little bland. The icing really needs to be whipped longer to fully dissolve all of the sugar into the frosting.

Easy OREO Truffles

Decadent. These were so easy and delicious. After putting them in the fridge for about 20 minutes, I used a cookie-scooper to make them bite-sized (it made the process quick and uniform). Then I dipped them in dark chocolate. Enjoy.

Blueberry Cream Muffins

December 5, 2010- Yum! These were delicious. I recommend using papper liners, because these muffins are very moist. I made one third with a crumb topping, one third with a lemon glaze and one third plain. I liked the crumb topping best, the lemon glaze made it taste too much like a dessert. Although, dessert for breakfast is always good. This is a perfect addition to your brunch menu. May 20, 2013- So delicious! This time, we altered the recipe, by following reviewers suggestions of 1/2 white sugar and 1/2 brown sugar, we also used 1/2 all-purpose flour and 1/2 wheat flour, we added 1 tsp cinnamon, and substituted vanilla Greek yogurt for sour cream. Whenever we bake muffins, we always coat the blueberries or dried fruit in the flour mixture, prior to folding it into the ingredients. We didn't use paper liners, but we did let the muffins sit in their tins for about five minutes before removing and setting aside on a cooling rack. Yummy!

Bake Sale Lemon Bars

I received so many compliments on this dessert. I followed the advice of the reviewers and doubled the filling, which put the lemon bar more in proportion. The cookie crust was my favorite part. I'll definitely be making this again.

Banana Crumb Muffins

Thank you Lisa, these are delicious! My husband doesn't even like fruit in his food and he requests these anytime he sees the bananas going too ripe. In fact, I think he overbuys bananas just so I'll make these again. The only change I made was to double the crumb topping and to use 1/2 white sugar and 1/4 brown sugar in the batter.

Quinoa with Sweet Potato and Mushrooms

I love finding new recipes using quinoa. This one was a little spicy for me. Next time I'll make the following modifications: 1, replace ¼ t cayenne with ¼ t cinnamon (cinnamon is the perfect companion for sweet potatoes and pecans); 2, begin preparing and cooking the vegetables first (before cooking the quinoa); 3, add an extra tablespoon of olive oil prior to adding the mushrooms, sweet potatoes and spices; 4, five minutes into cooking the vegetables add ¼ cup of water to the vegetables. I loved this so much, I’m thinking of adding this to our Thanksgiving menu. Thank you lep413 for a delicious recipe.

Mini Eggplant Pizzettes

If you un-South Beach this recipe, it would be wonderful (dip the eggplant slices in an egg wash, then dip them in a seasoned bread crumb mixture, fry them in extra virgin olive oil, add extra cheese). However, if I was going to make this again the South Beach way, I'd first toast the eggplant and then add the sauce and cheese and finish baking. The eggplant was a little mushy.
