Pineapple Chicken Tenders

What's not to love! Three ingredients- pineapple juice, soy sauce and brown sugar. My kids DEVOURED this! We brined our chicken first for about an hour in a gallon ziplock, poured out the brine, rinsed the chicken, and then poured the marinade into the same bag and let it sit for about two hours in the fridge. Juicy, flavorful and delicious. Thank you for sharing HJR. Here's the brine recipe- 4 cups of water, 1/2 cup kosher salt, 1/4 cup sugar

Creamy Rice Pudding

Thank you Erica for sharing this recipe! This was so delicious and fool-proof. It was similar to the one my Grandfather used to make, that no one has been able to duplicate. Thank you. We added 1 Tbsp of ground cinnamon, instead of 1 tsp, because that's how my family always made it- other than that, we followed your recipe exactly. Thank you. Thank you. "It was really, really good. We need to send our friends a bowl-ful." my little five-year old daughter said, she helped to make your recipe.

Strawberry Bread

Thank you so much Ellen for sharing this delicious recipe. I halved it, because I wasn't sure if my family would like strawberry bread. I wish I would have made the full recipe, because it's almost devoured already. We made slight changes to suit our families tastes (for a half recipe): 1- used 1 1/2 cups of diced strawberries, 2- only used 3/4 cup of sugar (and tossed all the sugar with the strawberries), 3- for the flour we used 1 cup of white whole wheat and 1/2 cup plus 1 Tbsp of all-purpose, 4- cut the cinnamon down to 1 tsp, 5- added 1 tsp vanilla to the wet ingredients, 6- substituted 1/2 cup of nonfat Greek yogurt for part of the oil, still added 2 Tbsp of oil to make up the difference. This WAS absolutely delicious. Thank you again Ellen for helping me to feed my family delicious wholesome food. Thank you also to all the reviewers for your suggestions.

Pumpkin Gingerbread

This was our first "pumpkin gingerbread" and we loved it! It's sweet and spicy, it smells delicious and tastes even better. It's fantastic with a cold glass of milk or a mug of hot coffee. We halved the recipe, since I wasn't sure if we would like this. Instead of pumpkin, I used a roasted sweet potato (when mashed it was just shy of one cup). We also used 1 1 1/4 cups white whole wheat flour and 1/2 cup of bread flour, instead of just all-purpose. AND we substituted non-fat Greek yogurt for the oil. Ok, so we made some changes- it's a very forgiving recipe. We loved it. We will definitely be baking it again. We didn't add any frosting or topping, it didn't need it. It's sweet enough on it's own. I may cut back on the sugar slightly next time. Although, it is really good as is. Thank you Frosty for a delicious recipe that my little 4 1/2 year olds and I enjoyed immensely. UPDATE: We have baked this bread SIX times already! My kidabunks keep devouring it. It's a great Kids in the Kitchen recipe. We did cut back on the sugar to one cup (for a half-recipe) and used two tablespoons of orange juice as part of the water. It was still plenty sweet. We have one more sweet potato and only two tiny slices of Pumpkin Gingerbread, I know what we'll be baking today.

Chocolate Truffle Cookies

These are a chocolate-lover's dream come true! Bursting with chocolatey gooeyness. They are so decadent. Before folding in the last cup of chocolate chips, I divided the batter in two bowls and then folded in bittersweet chocolate chips in one batch and white chocolate chips in the other. I was going to drizzle more chocolate on top, but they came out of the oven with a gorgeous glossy crust. We used a cookie scoop to portion these out, and baked them for 9 minutes. Delicious! Cranberry Sauce

This so much better than the can! I can't believe how easy this was. We only had 1/2 cup of orange juice from our orange, so I used 1/2 OJ and 1/2 water. I cooked ours for twenty minutes and then let it set for three hours. It was perfect! Thank you Toni!

Whole Grain Waffles

This is a delicious HEALTHIER and kid-friendly recipe. We added 1/3 cup of bittersweet chocolate chips to the batter. The kids (4 1/2) gobbled them up, without adding any maple syrup. We didn't have any wheat germ so we substituted with more all-purpose flour. Thank you for sharing.

Marshmallow Buttercream Frosting

Thank you Staci! I halved the recipe and I still had enough to frost a double-layer 9" cake. The frosting comes together beautifully within minutes. It didn't have a strong marshmallow taste, so the next time we make this we will double the marshmallow creme.

Corn Tortillas

These are so much better than the ones in the store! I dissolved a tsp of salt into the hot water and then mixed it together with the masa. We followed the advice of others and used a cut open gallon ziplock bag to keep the masa from sticking to the press. Absolutely delicious!

Best Brownies

We will never buy boxed brownies again! This came together so fast. It was so delicious and fudgy, it wasn't cakey at all. 25 minutes was perfect! Remember to flour the pan, it will help prevent sticking.

Beet and Pear Puree

This is so decadent, especially with all the butter. Absolutely delicious. I threw it in the blender and pureed it, to be served as a tasting soup. I loved it, my little picky 4 1/2 year olds, were- well picky. That's ok, when they are older they will like it.

Perfect! We used 1/2 unbleached all purpose and 1/2 white whole wheat flour. The next time, I may increase the whole wheat flour to 3/4 and leave only a 1/4 of all purpose.

Apple Dip

Fantastic! We made this for a quick addition to our fruit platter. Delicious, quick, easy, and I had all the ingredients on hand- makes this five stars! Quick tip- to hasten the softening process of the cream cheese. Open the brick of cream cheese, then slice it into eight pieces, separate the pieces on the foil wrapper and leave on the counter for 20 minutes.
