Hot Tomato Grits

Really great recipe!! I used more bacon and home-made broth so this is a REAL keeper for us. As is with any recipe, you need to customize to suit your taste. All I can say is yum-yum! Love things thick and tasty!!

Grits and Sausage Bake

Oh my! I hate the ratio of water to grits did not work :-) This is a really good flavored recipe but way too much fluid for the amount of grits. Growing up in the South I have prepared grits more times than I would like to remember so a good rule of thumb is to add 1 1/4 to 1 1/2 cup of water for every cup of uncooked grits you wish to prepare--not quick cooking. In this recipe reduce the amount of fluid to accommodate the amount of grits. You can always add more liquid if too thick but don't forget the milk added in later. Leave this as close to the orginal amount as possible since this will add creaminess and flavor.

Hearty One Pan Breakfast

Very, very good! I did make some changes to better suit our taste such as adding more bacon, adding mushrooms, and decreasing the amount of tomatoes. Overall, a great base recipe with lots of possibilities! thanks!

Blackened Fish

I altered the recipe quite a bit spice wise as it is really too much for children. I also used the grill outside to heat the cast iron skillet and cooked the fish there as well. Just sit the skillet directly on the grill on high heat. No problem with smoke in the house and it works beautifully.

Appetizing Bread

I thought this was a great base recipe. I did limit the amount of oil and sprinkled some coarse salt on top prior to heating. Sliced olives blended well for our taste with the cheese. Next time I'll try some tomatoes in oil, capers, and maybe a bit of ham for a really heavy buffet type of bread.

Fantastic Black Bean Chili

This is a great base recipe for our taste. As any good cook knows, you take a basic recipe and adapt it to the seasonings you like or love. Ground turkey is bland so I also added the cumin--about 2 tablespoons as we LOVE the flavor, and used ground oregano--about 2 teaspoons to a pound of raw turkey. If you use ground turkey breast it may be necessary to add 1-2 T. oil to brown it if to dry. I love to simmer meat and seasonings in a bit of fatless chicken broth until tender then add the rest and simmer for 10+ minutes. Enjoy!
