Baked Dijon Salmon

My husband adores salmon. We have it quite frequently and always look for new recipes. This was abosolutely scrumptious prepared exactly as written. Although there are just the 2 of us, I prepared it for 4. The following day, after work, I just gently reheated on low in the microwave and it was great and even more tasty. We had it last Sunday and will be having it again today. This recipe is a definite keeper!

Restaurant-Style Spinach Casserole

This recipe was quick and easy. I had recently visited a farm market and purchased a large quantity of fresh spinach, which I blanched and chopped. Had on hand cream of mushroom instead of celery soup. Sauted the onions in just 2 T. of butter instead of 4, omitted adding any additonal salt and used 1/2 Tsp. powdered garlic. It was scrumptous! My husband suggested trying it next time not sauting the onions for the added crunch. This man hates creamed spinached, but gobbled this down and said I should definitely make it again.

Mock Chopped Liver

Yummmmmm! Just scruptious. Was looking for a nutrious and healthy snack and this is a winner. Will be serving it on semolina bread rounds that were brushed with olive oil and toasted in the oven and spread with roasted garlic. Also making some fresh potato chips made in the microwave. Gave my husband a taste of the mixture before putting in frig to chill and he said I should make a big vat of it. He intends to also use spread on some whole grain bread for his lunch tomorrow. We will definitely make this again and again. Thanks for a wonderful 5 star recipe.

Oven Roasted Red Potatoes

I have found that this recipe is improved by sifting out the dried onion bits that tend to burn, causing a bitter taste, and is replaced with large diced fresh onion. The pieces cook along with the potatoes, become nicely carmelized and sweet. You may have to increase roasting time to allow for the addition of the onion's extra moisture.
