Black and Blueberry Smoothie

I just made this now and it hit the spot. Lately I've been pulling back from overly frozen smoothies because they either give me a headache or heartburn from the sugar. This was perfect because it's not too sweet. I actually forgot to add the honey in my haste and I don't even miss it. While I like coconut butter for cooking I couldn't bring myself to add it to the smoothie so I used unsweetened coconut flakes instead and I didn't have blackberries so I used raspberries and blueberries. It made a pretty purple drink. I've always used chia seeds but never noticed before they are a great iron, calcium, and protein source as well as fiber. Added bonus is this doesn't use frozen banana (a mainstay of my normal smoothie) so I might actually get my kid to try it. ;)

Tasty Lentil Tacos

I loved this!!! So much better than I expected. I've been basically vegan for a while now (not strict)so making dinners my kids like too can be challenging. They still want meat and I'm fine with that as they are growing boys. Lately when I've made tacos I'd use ground turkey but then I would just use refried beans in mine and avoid the taco meat altogether. Tonight dinner was amazing! So much better, fresher, tasting than any meat. Boys both scowled when they saw the replacement but after a few bites admitted that it wasn't bad at all. High praise around here. I couldn't stop eating it. I made it exactly as directed. I used the same Garden of Eaten taco kit I get in the organic section at Kroger and just used 1 TBS of the seasoning from the box. It felt a little wasteful when I could have made the seasoning from scratch but Garden of Eaten only sells kits and I'm not going back to cheap taco shells with all the addtional additives in them. I used the Kroger Simple Truth mild salsa and 2 (1cup cartons of chicken broth - will try veg broth next time but wanted to ease kids in slowly. lol ). The lentils were still a tad crunchy at 30 min but the liquid was gone. They mashed up fine and you don't even notice the bite to the beans since the shells are crunchy too. There is only a little left over from making 12 shells and I'm looking forward to lunch tomorrow. Thanks MK! Will have to check out your other recipes.

Luscious Four-Layer PHILLY Pumpkin Cake

I have made this cake every year since Kraft first published it. I can't even eat it anymore but I still make it because I know how delicious it is and how everyone raves over it. The trick to cutting 4 layers from 2 standard cake rounds is using thread and pulling it thru the layers gently but firmly. Cuts perfect layers every time. Also, using Spice cake mix instead of yellow a big plus!

Five Bean Casserole

Love this! I omit the bacon to make it vegetarian and just use a little veg oil to saute the onions. Also 28oz can of veg baked beans. Its perfect for crockpot too. Just make sauce as directed but put all in crockpot instead of oven. Thanks! I've been making this since I originally printed it out in 02/2007 and thought I'd finally review it while I was forwarding it to a friend. :)

Whole Grain Waffles

This recipe hardly needs another review but these were wonderful. I haven't varied from my own healthy concoction in years but was ready to see what someone else had done. I didn't go totally wheat free as someone had posted but I did use the rice flour in place of the all purpose and I'm sure subbing the buckwheat for the whole wheat next time will be great! Thanks for contributing such a perfect recipie!
